Back in my early blogging days of packing lunchboxes, I used to eat cheese and jam sandwiches! I absolutely love thick slabs of cheddar cheese, and the sweetness of cheese with the jam is the perfect combination. I usually added some spinach or arugula to the sandwich for some greenery as well. This English muffin breakfast sandwich brings that same combo to your mornings with a fried egg packed in! You must cut your cheese thick (you want to keep its texture vs. wanting it to melt) and these stone wheat English muffins are the best ever.

Toast the English muffin.

Fry an egg to your liking. Tip: poke the yolk so it cooks and doesn’t run out. And don’t forget to season with salt and pepper.
Step 3
Spread toasted English muffin with fig jam and add a few thick slices of sharp cheddar cheese. Add a handful of fresh arugula.
Step 4
Add the egg to your English muffin.
