- Make sure you measure your flour accurately. If you’re using measuring cups, use the spoon and level method. If you use your measuring cup to scoop flour out of the container, it can add an extra 50% of flour to the recipe and will lead to dry and dense muffins. Or use a kitchen scale and the grams measurements (you’ll have fewer dirty dishes to wash)!
- Don’t overmix the muffin batter. Overmixing cake batter strengthens the gluten which makes tougher and denser baked goods.
- For the highest muffin tops, bake the muffins in every other cavity in your muffin pan. This encourages more of the oven heat to circulate each muffin which makes them rise taller! I like using a USA muffin pan as the cups are spaced out and each muffin gets even more heat circulation!

I prefer soy milk as it’s high in protein and creates softer and more tender muffins. However, any dairy-free milk will work (such as almond milk or oat milk).
For simplicity, I avoid using special egg replacers in vegan muffins. Instead, I make sure that muffins have enough leavening agents such as baking powder or baking soda, but not enough that you can taste it. You can also add a little apple cider vinegar to the batter, as it tenderizes the gluten and makes softer muffins. If the muffin naturally contains fruit (like banana muffins), I add extra fruit to ensure the muffins are moist.
