This chunky sausage cheese dip with sweet tomatoes is an easy slow-cooker appetizer. Sprinkled with crunchy green onions and dipped with salty tortilla chips, it’ll be the life of the party.

Why I Love This Sausage Cheese Dip

Watch out because people will want to dip their chips straight into the slow cooker. Real-life talk: I was one of those people.

  • Wholesome. It’s just melted cheese with milk, sausage, and tomatoes. No funny ingredients.
  • Crowd-pleaser. Everyone loves dips, especially freshly made ones with smoked sausage.
  • Great for gatherings. Set the slow cooker to WARM and enjoy a melty dip all afternoon.
  • Beginner-friendly. This smokey dip with sweet tomatoes and green onions practically cooks itself!

Recipe Ingredients

A handful of pantry ingredients, like shredded cheese, smoked sausage, and tomatoes, add sweetness to balance out the richness of the cheese. Scroll to the recipe card at the bottom of the post for exact amounts.

  • Cheddar cheese – I prefer sharp cheddar, but mild works too.
  • Monterey Jack cheese – Feel free to use Muenster, mozzarella, gouda, or any melty cheese.
  • Diced tomatoes – Drain them well so the dip doesn’t split due to their moisture.
  • Smoked sausage – You can also use cooked Italian sausage.
  • Milk – Any dairy milk can be used for this.
  • Green onions – You’ll need the white and green parts.
  • Tortilla chips – Pita chips are a great swap.

How To Make Sausage and Cheese Dip

As with many crockpot recipes, all you will need to do here is add the ingredients to the slow cooker and forget about it until it’s time to dig in.

  1. Fill the slow cooker. Except for the green onions and tortilla chips, add all of the ingredients in the same order they’re listed into the slow cooker.
  2. Cook it. Set it to LOW and cook everything for 2 hours or until melty and smooth.
  3. Serve it. Set the slow cooker to WARM, garnish with green onions, serve, and enjoy!

It’s hard for this melty sausage cheese dip to get boring when you can make it pizza-style or Tex-Mex.

  • More toppings. 1/4-1/2 cup crumbled chicharron, browned chorizo, sour cream, shredded buffalo chicken, or pulled pork are great ways to add more flavor to every bite.
  • Make it pizza-style. Swap the smoked sausage for chopped pepperoni or Italian sausage. Top the dip with sautéed mushrooms for a pizza-style dip.
  • Avoid moisture. Make sure the slow cooker pot is completely dry before you add the ingredients to the pot. If the cheese comes into contact with any moisture, it will seize and prevent the dip from becoming smooth.
  • Use leftovers. Shred up any leftover bits of cheese you have laying around in the fridge and use it for this recipe. Cheese mixes work too.
  • Go Tex-Mex. Add 1/2 cup crumbled bacon to the ingredients (on top of the cheeses) and 1/4 finely chopped serrano to the slow cooker. Topping ideas include black beans, sliced avocado, and queso fresco.

Serving Suggestions

My smokey sausage cheese dip is great for dipping with tortilla or pita chips. My Garlic Breadsticks and Parmesan Breadsticks are amazing too. Serve it with other appetizers like my Air Fryer Chicken Tenders, Cajun Fries, and Cheeseburger Sliders to complete the party.

Proper Storage

This savory dip is best the day it’s made, but the leftovers will be just as good.

  • Fridge: Store it in an airtight container for up to 3 days.
  • To reheat it: Stir in 2 tablespoons milk and microwave it in 20-second increments until warm. You can also place it back in the slow cooker over “Warm” until nice and melty.
