When it comes to keto baking, coconut flour and almond flour are the two most commonly used flour alternatives. People tend to have a preference for one over the other. Sometimes it’s due to allergies, and sometimes it’s a preference for flavor or texture.

But coconut flour is by far the trickiest ingredient to work with. It’s fine and powdery, and it has an astonishing capacity for soaking up eggs and liquids. It’s like a sponge and behaves very differently from both wheat flour and almond flour.

However, once you get the hang of it, it can make some of the best keto cakes and muffins you’ve ever tasted. And it’s useful in many savory recipes too. It’s worth taming the coconut flour beast, trust me!

Is coconut flour keto?

I hate the idea that a certain food is “keto” or “not keto”. But it goes almost without saying that coconut flour is absolutely appropriate for the keto diet.

Coconut flour is an ideal keto flour because it is:

  • low in carbs and high in fiber
  • inexpensive, as low carb flours go
  • gluten-free
  • grain-free
  • nut-free

If you are low carb and nut-free, coconut flour may be one of your best options for keto baking. Still, it’s not an easy flour to work with, especially if you are new to this low carb diet thing.

Before you start, I suggest you read my primer on How to Bake with Coconut FlourYou can’t just sub in coconut flour for regular flour or for other low carb flours. It’s very dense and it requires an inordinate amount of eggs to bake properly, so direct substitutions will result in utter failure!
