  1. Prep: Preheat the oven to 400°F. Cut the fish into 2 pieces and place them on a small baking sheet.
  2. Season the Trout: Spread olive oil over the fish and season with salt, pepper, and lemon zest.
  3. Top the fish with shallots (or chives), garlic, capers, lemon zest, and lemon slices.
  4. How Long to Bake Steelhead Trout at 400°F: Bake the trout for 16 to 22 minutes, depending on its thickness, or until the center is opaque. It should flake easily with a fork.
