It has been a long time since I have posted a vegetable side dish, so here’s a good one! This Steamed Broccoli with Cheese Sauce is one of my all time favorite ways to serve broccoli.

Steamed Broccoli with Cheese Sauce:
This recipe is easy to make. It’s as simple as steaming broccoli and pouring on a delicious cheese sauce… homemade cheese sauce from scratch of course! To steam broccoli, I use a steaming basket inside a regular pot, but you can also use a traditional vegetable steamer. Whichever you choose, just be sure to stop steaming broccoli when a fork can go in easily but the broccoli is still firm. No one wants mushy broccoli. While the broccoli steams you make the cheese sauce.
The Cheese Sauce:
I love a homemade cheese sauce and in my humble opinion knowing how to make one is a basic skill every cook should have. To make a cheese sauce you simply melt butter in a sauce pan, add a little flour, stir to form a roux (this thickens your sauce) add warm milk and finally the grated cheese. You stir until smooth and voila! You have a creamy cheese sauce to top your baked potato.

broccoli, cut into florets and steamed -

grated cheddar cheese -

flour - generous pinch of sea salt and sever turns freshly ground black pepper

Cut broccoli into florets. Add to steaming pot or electric steamer. Cook until a fork goes in fairly easily but broccoli is still firm (no muchy broccoli!)
While broccoli cooks: make cheese sauce

Use a food processor or box grater to grate cheese. Heat milk in small pot or microwave until warm. In a small sauce pot on medium heat: add butter, melt. Add flour and whisk. This is a roux. A roux thickens your cheese sauce. Add salt and pepper, then slowly add warm milk to roux while whisking. Once all the milk is added, keep whisking until sauce starts to thicken.

When sauce has thickened bit, begin adding cheese a small handful at a time, whisking constantly. Once all cheese is melted, remove from heat.

Place broccoli on platter or into a bowl. Pour cheese sauce over broccoli. Serve. If you have extra cheese sauce, you can keep it in the fridge for several days and reheat later.
