This Ninja Creami, Sugar-Free Strawberry Jell-O ice cream is deliciously light and fruity, high in protein and low in calories and carbs! Yum!

Who knew sugar-free strawberry Jell-O could create such a vibrant and delicious, fun and fruity ice cream?! But, even better, this super-charged, strawberry Jell-O ice cream is sugar-free, high in protein, and low in calories and carbs… and you wouldn’t even guess it. It’s that good and even better.

As a main ingredient, the sugar-free strawberry Jell-O creates a concentrated strawberry flavor and turns the ice cream into a bright pinkish-red color. Other ingredients include cottage cheese, almond milk, allulose sweetener, and vanilla extract.

My son thought the ice cream should be called strawberry cheesecake since the cottage cheese creates a slightly creamy, cheesecake-like flavor in the ice cream. But, if you ask me, it just bursts with fruity strawberry flavor.

Or course, it’s an easy ice cream to make in the Ninja Creami. As our directions indicate, you’ll need to first dissolve the powdered Jell-O in almost boiling water before combining with the rest of the ingredients. But, not to worry, it’s very simple.

When finished, you can eat the ice cream as is (as it bursts with flavor) or you can top with fresh strawberries and whipped cream. We hope you enjoy this fun and fruity ice cream as much as we do!

Ingredients

Strawberry Sugar-Free Jell-O Gelatin Mix: Of course we use sugar-free strawberry Jell-O, but we use just a little bit (1 ¾ teaspoons) for the ice cream (you can use the leftover mix to make Jell-O). You could even consider another Jell-O flavor of choice.

Almost boiling water: To dissolve the Jell-O mixture, you’ll heat a ½ cup water to almost boiling and stir with Jell-O mixture for two minutes until fully dissolved.

Full-fat (4%), small-curd cottage cheese: Cottage cheese is the key ingredient for making a creamy, high-protein, low-calorie ice cream. We use a full-fat (4% milk fat) cottage cheese for a creamier texture.

Unsweetened Vanilla Almond Milk: To create the right consistency, you need a liquid. We use unsweetened vanilla-flavored almond milk since it’s low in carbs and calories. You may substitute with another type of low-carb milk like unsweetened macadamia milk.

Allulose: Unlike other sugar-free sweeteners, allulose has little to no aftertaste, which is important when using a larger amount of sweetener. Allulose also seems to work better with full-fat dairy products, as opposed erythritol sweeteners.

Vanilla Extract: We use just a little vanilla extract to enhance the flavor of the ice cream.

Guar Gum: Guar gum is thickening agent that helps create a creamy texture in the ice cream.

Xanthan Gum: Xanthan gum helps improve the texture and reduces ice crystals. Xanthan gum and guar gum work well together to produce the best texture.

Step-by-Step Instructions

STEP 1: Pour Jell-O powder into a large mug. Heat water to almost boiling and combine with Jell-O powder. Stir for two minutes until Jell-O is fully dissolved. Then, stir in almond milk and vanilla extract.

STEP 2: In a separate cup or small bowl, stir together allulose sweetener, xanthan gum and guar gum. Pour the liquid, powdered mixture and cottage cheese into a blender and pulse until well combined.

STEP 3: Pour the blended mixture into a Ninja Creami pint container and place in the freezer. Let freeze for at least 24 hours.

STEP 4: After freezing, take the lid off the pint container and place in the Ninja Creami outer bowl. Install the Creami paddle into the outer bowl lid, place the lid on the outer bowl and lock into place according to the instructions in the Creami manual. Select the Lite Ice Cream mode, and it will spin for several minutes.

STEP 5: When it stops spinning, take the container out and assess the consistency of the ice cream. If it’s powdery in texture, then you’ll need to respin until smooth. If you need to respin, place the outer bowl lid back on and lock it back into the Ninja creami and push respin. If creamy, as seen in picture 5, then remove pint.

STEP 6: When done spinning, serve immediately. Top with desired toppings.

Ice cream made by the Ninja Creami is best when eaten immediately. Since this ice cream is made with cottage cheese, it stores better than our other ice creams without heavy cream.

If you have leftovers, simply store in the freezer and serve when desired. You may need to let it thaw slightly for a few minutes but there is no need to respin this ice cream before serving left overs.

If you need to respin, place the outer bowl lid back on and lock it back into the Ninja creami and push respin. If creamy, as seen in picture 5, then remove pint and serve ice immediately with desired toppings.
