Easy Roasted Garlic Scape “Fries”


These roasted garlic scape fries are a delicious, crispy and easy savory summer snack for garlic lovers! Plus, they’re much healthier!

Attention garlic lovers: here’s a simple and tasty savory garlic scape recipe to add to your snacking game! These roasted garlic scape “fries” are simply trimmed garlic scapes that are roasted until crispy and topped with freshly grated parmesan cheese. A healthy summer snack that’s downright delicious!

If you’ve never tried garlic scapes before, you’re in for a treat! These curly, green shoots may not look that appealing but their tasty, mild garlic flavor is perfect for creating a unique twist on fries.

We got these garlic scapes as part of our summer CSA distribution, but you can also find them at farmers markets or specialty grocers since they’re becoming more and more popular.

Plus, these flavorful garlic scape fries are much healthier than regular fries and are done and ready to eat in less than 20 minutes!

What are Garlic Scapes?

Garlic scapes are the flowering stems that grow from the bulbs of garlic plants. They’re curly green shoots that appear in late spring or early summer. Garlic scapes are usually picked before they flower since they drain energy from garlic bulbs.

They have a mild garlic flavor, which can makes them ideals in sauces, salads, soups, stir fries and more. You can eat any part of the garlic scape raw.

Ingredients

Garlic Scapes: We use one bunch of garlic scapes, about 8 to 12 scapes. We trim off the very thin curly part just above the flower bulb (about a ยฝ inch up from the bulb) since it can burn when roasting. We then chop the lower thicker scape into 2 to 3 inch long fries.

Extra-virgin olive oil: You can use olive oil or avocado oil for roasting. Just a little is needed โ€” about a teaspoon.

Freshly grated parmesan: We love the flavor that freshly grated parmesan adds to these garlic scape fries! While you can use pre-grated parmesan, it’s not as light and flavorful. We sprinkle the grated parmesan on the fries after roasting.

Salt and pepper: Just a little salt and pepper is need for roasting.

Lemon juice (optional): Just a squeeze of fresh lemon juice over the fries when done brightens them up!

How to Make

STEP 1: Preheat oven to 400 degrees F. Trim scapes as indicated.

STEP 2: On a rimmed baking sheet, toss scapes with a teaspoon of olive oil. Lightly season with salt and pepper. Spread about pan, leaving space between each scape.

STEP 3: Roast for roughly 15 minutes, flipping half way through. When done, scapes should be lightly charred and crispy.

STEP 4: Top with freshly grated parmesan and a squeeze of lemon juice (optional). Serve immediately.

Other Seasonings to Consider

You can season these garlic scape fries in a number of ways. To add a little kick, simply add a pinch of cayenne powder or red pepper flakes. Or, you can consider these other seasonings:

  • Chili powder
  • Paprika
  • Onion powder
  • Old Bay Seasoning
  • Cajun Seasoning
  • Ranch Seasoning

Another good option is serve alongside a garlic or sambal aioli for dipping. Of course, you can use whatever dip you’d normally use for any type of veggie fries.
