1 lb ground turkey

1 medium onion, diced

3 cloves garlic, minced

1 tsp italian seasoning

1 chayote squash, peeled and diced

1 tsp crushed red pepper

1/2 cup sun-dried tomatoes, drained and chopped

Salt and pepper to taste

1 bunch kale, leaves stripped and chopped

3 cups unsweetened almond milk

1/4 cup freshly grated Parmesan
Directions:

In a large stockpot, under medium high heat, add your meat and cook until brown.

Add your diced onion and garlic and saute.

Add chayote and sun dried tomatoes.

Add your seasonings, your Kettle and Fire chicken broth and almond milk.

Bring your soup to a low simmer and add your kale and Parmesan cheese. Garnish and enjoy!
