I especially love a good sweet and salty combination. This watermelon salad with feta, cucumber, mint, and a tangy lime dressing is exactly that.

This watermelon salad recipe is one of our favorite summer side dishes! Salty feta cheese, crisp cucumber, and fresh mint accent the sweet, juicy watermelon. Easy and refreshing, it’s perfect for a hot day.
For the salad
- 5 cups cubed watermelon
- Heaping 1 cup diced English cucumber
- ÂĽ cup thinly sliced red onion
- â…“ cup crumbled feta cheese
- 1 avocado, cubed
- â…“ cup torn fresh mint or basil leaves
- ½ jalapeño or serrano pepper, thinly sliced, optional
- Sea salt

Make the dressing: In a small bowl, whisk together the olive oil, lime juice, garlic and salt.
