Rhubarb season for me always signals the beginning of the “baking year” cycle somehow. I suppose because it’s the first thing I see coming in the garden, crisp and colorful, and it always makes me happy and excited to get baking with something fresh. Plus the signature tartness of rhubarb in desserts is something to look forward to when it’s finally in season.
It’s also such an easy plant to grow. Too easy, in fact. It tends to grow and spread, and before you know it, you’ve got way more rhubarb than you could use (or is it just a me problem…?).
So I thought to highlight a few basic recipes I tend to use it in, in case you’re looking for ideas, or in case you’re just inspired by the big beautiful stalks saturating the markets and want to make something delish with them.
By the way, I often chop it up and freeze it for later use, because otherwise I get a little “rhubarbed-out” trying to eat it all fresh! The recipes below work well with fresh or frozen rhubarb, to suit your needs.
