I truly enjoy making and using this lavender syrup in my kitchen. The floral notes it brings to my drinks and desserts make everything feel unique and luxurious. In my years of cooking and making homemade pantry staples, I have accumulated a collection of homemade sweeteners. I make them occasionally, and I am sure you will also enjoy them.

If you are new to my blog, homemade liquid sweeteners like maple syrup, keto caramel sauce, condensed milk, and sugar-free chocolate syrup are perfect examples.

I also have a keto brown sugar recipe for dry sugar substitutes and a stevia powder recipe made from fresh stevia plants. I use them almost every day for my coffee and tea.

Dried Lavender vs Fresh Lavender

If you need clarification about what lavender to use for this syrup, you can use fresh and dried lavender. Before using them, consider a few things. For example, dried lavender has a more concentrated flavor. It is easier to strain out after steeping, while fresh lavender may give a slightly different flavor profile than dried lavender because it is fresh and can add bitterness.

Ways To Use Lavender Syrup Recipe

There are lots of ways how to use lavender syrup, and you can add it however you like in recipes, such as:

How To Make Lavender Simple Syrup Recipe

Making this sugar-free syrup is easy, and you only need a few ingredients. Following these steps will achieve culinary lavender simple syrup, your new favorite sweetener for drinks and desserts. 

Kitchen Gadgets Needed:

  • Cooking Pot: You must simmer water and sweetener together, so use a medium-sized cooking pot or saucepan to make this recipe.
  • Measuring Cups: Use measuring cups for the ingredients so you will know the exact measurement and adjust if not enough or too much.
  • Strainer: A small fine mesh strainer is okay for removing all the lavender bits from the syrup.
  • Whisk: Use this to stir the syrup while it simmers because it is easier than a spatula.

Lavender Syrup Ingredients:

  • Water: Prepare water that will be the base of our syrup.
  • Powdered Sweetener: For this recipe, I am using powdered allulose, but you can choose your favorite sugar-free sweetener like stevia powder, erythritol, or monk fruit, as they all work just as well.
  • Lavender Food Grade: As the main ingredient for this recipe, you will need food-grade dried lavender buds or flowers. You can find them at health food stores or directly on lavender farms, but make sure they are culinary-grade lavender.
  • Xanthan Gum: This helps thicken the syrup and give it a smooth texture.

STEP-BY-STEP INSTRUCTIONS TO HOMEMADE LAVENDER SIMPLE SYRUP

First Step: Ingredients

Prepare first all the ingredients needed for a smooth and easy process later.

You can use allulose, monk fruit, or xylitol as sweeteners. They are all good, but make sure to use powdered ones because they dissolve easily.

Ingredients for lavender simple syrup include lavender food grade, powdered sweetener, xanthan gum, and water, displayed with respective measuring tools on a stovetop.

Second Step: Water and Sweetener

Start heating your pot and add the water and sweetener. Mix them with a whisk until the powdered sugar completely melts. I am using 1/2 cup of water, but if you want to make a bigger batch, you can do 1 cup or 2.

Three steps to make a mixture: 1) Pour liquid from a purple cup into a pot; 2) Add powdered ingredient with a copper measuring cup; 3) Whisk the mixture in the pot.

Third Step: Add the Lavender

Once you are done with the water mixture, add three tablespoons of lavender to the pot. Reduce the heat to low and let the mixture simmer for about 15 minutes. Heat and allow the lavender to infuse its flavor.

After the cooking, use the filter to strain the lavender buds or flowers from the pot. Strain half of them and leave the other half in there.

Fourth Step: Xanthan Gum

After straining half of the flowers, add enough xanthan gum and 1 tablespoon of fresh lavender to color the syrup. Mix until the xanthan gum dissolves, and then switch off the heat.

Close the lid and let it steep for 30 more minutes for the best flavor.

TIPS AND TRICKS FOR MAKING THIS RECIPE:

  • Sweetener: If you do not have a powdered sweetener, you can use crystallized ones, but crush or blend them so they dissolve quickly in water.
  • Adjust: When making easy syrups like this, remember to taste if it suits your taste. Always check if it is sweet enough and adjust while you are in the cooking process.
  • Xanthan gum: If you have no xanthan gum in your kitchen, use any suitable thickening agent or use guar gum instead.

Is This Also Good In Coffee and Cocktails?

The same as my simple syrup recipe, this lavender syrup is great for sweetening coffee or tea. I prefer using stevia powder or dry sweetener for my hot coffee, but for my iced coffee, like my usual cold brew coffee, I prefer syrups. 

This is perfect not only for coffee but also for party cocktails, lavender lemonade, lavender latte, lavender coffee, and customized lavender martinis. Making this lavender syrup is like making lavender honey but with a stronger flavor.

What Makes Lavender Syrup Purple?

The lavender flowers give the syrup its beautiful purple hue, which is the natural color of lavender. This happens when the fresh flowers are steeped in hot water. The pigments are released, infusing the syrup with a lovely lavender flavor and color.

Can I Store Lavender Syrup by Refrigerating It?

Sure. You can refrigerate it to keep it fresh and maintain its original flavor. When storing it in the refrigerator, make sure to put it in a container with a tight seal. Use an airtight container such as a glass jar or bottle with a tight-fitting lid.

How Long Does Lavender Syrup Last?

If you store your lavender syrup properly, as I suggested, it can last up to a month or two at most. If you need more, you can always double or triple the recipe.
