Ingredients
Chicken breasts–Chicken breasts are cut into bite-sized pieces,tossed in Greek seasonings,threaded onto skewers,and grilled until tender and juicy. Feel free to use boneless chicken thighs as a substitute but keep in mind that they’ll take slightly longer to cook.
Dried herbs and spices–Greek food is known for its bold and vibrant flavors,mostly thanks to simple herbs and seasonings. For this recipe,a mix of dried oregano,onion powder,garlic powder,dried basil,dried dill,salt,and black pepper is all you need to achieve that fresh Mediterranean flavor.
Instructions
Step 1:Marinate the chicken. Place the chicken pieces in a large bowl. In a separate small bowl,stir the dried herbs and spices together,then generously sprinkle the seasoning blend over the chicken. Toss to coat.
Step 2:Thread the chicken. While your grill is preheating,carefully thread the seasoned chicken pieces onto the skewers. Transfer them to a large plate or baking sheet.
Step 3:Grill. Grill the chicken skewers,turning occasionally,until the chicken is cooked through and has nice grill marks.
Step 4:Plate and serve. Transfer the chicken skewers to a serving platter and serve them with a side of homemade tzatziki. Enjoy!
Tips and FAQs
- Cut the chicken breasts into even 1-inch piecesto help them cook evenly and in the same amount of time.
- If you have extra time,marinate the seasoned chicken pieces in the fridge for at least 30 minutes or overnight.
- Leave a little space in between each piece of chicken on the skewersto allow the heat to circulate evenly around each piece.
- Use a meat thermometerto check that the chicken has reached a safe internal temperature of 165°F before taking the kabobs off the grill. This guarantees juicy,perfectly tender grilled chicken every time.
Tip
Don’t forget to soak your wooden skewers in waterfor 30 minutes! This prevents them from burning.
Variations
- For tangier chicken –Stir a splash of lemon juice or red wine vinegar in with the seasonings to elevate and tenderize every bite.
- Use Greek yogurt –Or use a few tablespoons of Greek yogurt to make the marinade creamy.
- Change up the herbs–Use thyme,rosemary,or parsley instead of oregano. Or,try using fresh herbs instead of dried herbs for a more vibrant flavor.
- Add heat–If you like a little kick of spice,add a pinch of cumin,paprika,smoked paprika,crushed red pepper flakes,or cayenne pepper to the marinade.

What can I use if I don’t have a grill?
No grill? No problem! You can still make these Greek chicken skewers using an alternative cooking method:
- Grill pan:Preheat the pan over medium-high heat,then add the skewers and cook them just as you would on an outdoor grill.
- Cast iron skillet:Add 2 to 3 tablespoons of oil to a large cast iron skillet and heat over medium-high heat. Once hot,cook the skewers in batches,turning them every so often to brown the chicken on all sides.
- Oven-roasted:Preheat the oven to 400°F and place the skewers on a baking sheet. Roast for 20 to 25 minutes,turning halfway through.
Can I grill vegetables on the kabobs,too?
You can definitely make your kabobs with both chicken and vegetables if you want! Assemble each skewer with pieces of marinated chicken as well as bite-sized bell peppers,onions,zucchini,cherry tomatoes,and/or mushrooms.
Storage
Refrigerator:Leftover Greek chicken skewers can be stored in an airtight container in the fridge for 3 to 4 days.
Freezer:You can freeze the marinated and uncooked chicken skewers in a freezer-safe bag or container for up to 2 months. Thaw the kabobs in the refrigerator overnight and place them on the kitchen counter for 30 minutes to bring them down to room temperature before grilling.

Instructions
Start by marinating the chicken:place the chicken into a large bowl. In a small bowl,stir all of the seasonings together,then sprinkle over the top of the chicken and stir until the chicken is coated. If you’re using wooden skewers,place them in a large bowl of water and allow them to soak for 15 minutes.
Next,heat your grill to medium-high heat.
Thread the chicken onto the skewers,then place onto a large plate or baking sheet.
Transfer the chicken to the grill and cook for 5-7 minutes,then flip and cook for an additional 5-7 minutes until the chicken is charred and no longer pink inside.
- Transfer the chicken to a serving platter and serve alongside homemade tzatziki. Enjoy!
