How to Make Easy Caramel Pecan Turtles:
When I say easy, I mean easy. But before we get to the process let’s talk ingredients. To make these Easy Caramel Pecan Turtles we only use four ingredients: pecans, caramel, chocolate and sea salt. When using so few ingredients you want to make sure each ingredient is top notch, so use the freshest pecans, quality caramels, really good chocolate, and a flaked or kosher sea salt so you get that wonderful little “bite” of sea salt on each little morsel! I use Werther’s original wrapped caramels, Ghiradelli 60% dark chocolate chips and Maldon’s Flaked sea salt ,it’s the best! (Save money by buying in bulk.)
The Process:
First, I place whole pecans in groups of four on wax paper. Then I melt the caramels in the microwave and place a dollup on each group of pecans. Then I melt the chocolate and spoon on top of the caramel, and last, I sprinkle with sea salt. Simply let them firm up and they are serve! They stay good in a sealed container for a couple of weeks so these are ideal to make ahead.
Melting the Caramel and Chocolate:
Caramels and chocolate usually have melting instructions on the package. Follow those instructions. If the caramels or chocolate you buy do not have instructions usually you melt in the microwave at 50% power one minute at a time until melted, stirring in between adding time. Caramel melts super fast, so keep and I eye out.
Tips and what you need: cooking spray, wax paper, good quality sea salt flakes or kosher salt flakes.

- your favorite cooking spray (I use a coconut oil spray for this one)

dark chocolate chips, melted - several pinches of good quality sea salt flakes

Spray wax paper with a light coating of cooking spray, this helps to keep the turtles from sticking.

Place pecans in groups of four in a flower (or cross) shape

Melt caramel in a microwave according to package instructions. If your caramels don’t have instructions, melt in the microwave at 50% power for 30 seconds, stir, if they need more time, repeat. But keep an eye on them they melt fast! Spoon over each group of pecans.

Melt chocolate in glass measuring cup according to package instructions (usually melt in the microwave at 50% power for 60 seconds, stir and repeat until melted and smooth) Spoon on top of caramel. Sprinkle with small pinches of sea salt. Allow to firm up before serving, this can take about an hour. Enjoy!
