Description

Make these fresh, healthy, two-toned, no added sugar fruit and vegetable popsicles, filled with berries and greens, in just 15 minutes.

Berry Layer:

  • 2 cups frozen mixed berries (i.e., blueberries, blackberries, raspberries, strawberries)
  • 1 cup plant-based milk, unsweetened, plain

Green Layer:

  • 1 cup packed, chopped greens (i.e., chard, spinach, kale)
  • 1 small orange, peeled
  • 2 small bananas, ripe, peeled
  • ½ cup plant-based milk, unsweetened

Instructions

  1. Make the berry layer first by placing frozen berries and 1 cup plant-based milk in the container of a small blender and pureeing until very smooth. Set aside.
  2. Make the green layer next by placing greens, peeled orange, banana, and ½ cup plant-based milk in the container of a small blender and pureeing until very smooth. Set aside.
  3. Divide berry layer into 10 portions to pour into a popsicle freezer mold, filling each well about 2/3 full. Pour the remaining green layer on top of the berry layer gently—do not stir together. Add popsicle sticks and lid. Freeze for about 3-4 hours until firm.
  4. Makes 10 popsicles. Stores up to 3 months in freezer.

Notes

Try an easy popsicle mold with lid, such as this one.

May substitute another type of fruit for berries, such as peaches, apricots, plums, or melon.
