I love the cool weather combination of butternut squash, kale, barley and hazelnuts—all wrapped together in this comfort food one-dish meal. Make it up for dinner and pack up leftovers for lunch the next day.

Pumpkin Overnight Oats 

I combine my favorite fall flavors of pumpkin, pumpkin seeds, and pumpkin spice into a nutrient-packed grab-and-go breakfast. One of my favorite, healthy, plant-based, easy breakfasts is overnight oats. I make them in a single serving mason jar the night before, then for breakfast I’m all set. You can enjoy these oats chilled or heat them up for a comforting breakfast. You can even make up a few overnight oat containers all at once for multiple breakfasts during the week.

Steel Cut Oats with Pears, Ginger and Dates

When fresh cranberries are in season, I go crazy! There are so many ways you can brighten up your day with these tart, crisp berries. Take this hearty steel cut oats breakfast, which includes simmered cranberries, pears, spices, pecans and chia seeds. Make a big pot and enjoy it over the next few days warmed up, with a splash of your favorite plant-based milk, for a healthy breakfast on the run.

Balsamic Butternut Squash and Brussels Sprouts with Farro

Nothing spells cool weather comfort like butternut squash and Brussels sprouts! These vegetables offer so much savory goodness when roasted and paired together, as they are in this simple farro dish. The golden hue of butternut squash is a calling card for its beta carotene content, and the pungent flavor of Brussels sprouts foreshadows its potent sulfur compounds—both are powerful antioxidants linked with health protection.

Stuffed Acorn Squash with Quinoa and Cranberries

Fall and winter is the time to celebrate the abundance of winter squashes, packed with vitamins A and C, fiber, potassium and more. One of my favorite ways to cook with squashes is to simply split them open, scoop out their seeds, and fill that cavity with something scrumptious—such as a savory, herbal filling.   I showcased   meatless crumbles (which you could replace with cooked lentils) in this recipe, along with quinoa, Tuscan herbs, cranberries, and walnuts. It’s so easy that you can serve it as a one-dish meal any night of the week, yet it’s pretty enough to be the headliner at your holiday table, too. 

Vegan Caramel Apple Microwave Mug

If you’re a fan of the “in a mug” trend—where you just pop a few ingredients into a mug, nuke it, and eat it, then you’ll really love this 5-ingredient recipe. Because it’s as healthy as it is delicious. It’s one of my favorite kid-friendly snacks. I used to help my son Nicholas make this as an after school snack. It’s one of the first recipes he could make on his own. Try it out and you’ll find a new easy favorite dessert, snack, or breakfast side.

Vegan Apple Crumble with Cinnamon

Nothing spells comfort like the combination of spicy cinnamon and sweet apples! One of the healthiest, fruit-centric desserts you can whip up is a baked apple crumble, with a thick layer of juicy apples and a crunchy whole grain topping. Every delicious bite is packed with fiber and nutrients.
