Blackstone Nachos – Recipe Diaries


Nachos are a good example of what it’s like to make a personal preference meal and they are fun to make on a Blackstone Griddle. I used my Ninja Foodi Grill Outdoor smoker to smoke the pulled pork meat before hand.

The protein options are endless, including chicken, pork, ground chicken, or ground beef, and so are the toppings. With loaded nachos, you can make anyone happy! My favorite nachos are with pulled pork and ground beef.

Ingredients Needed for Nachos

  • 1 pound of cooked pulled pork (you can use leftovers or store-bought) – instead of pulled pork use chicken or ground beef 
  • 1 bag of tortilla chips – Restaurant Style Tortilla Chips 
  • 2 cups of shredded cheddar cheese or Monterey jack cheese 
  • 1 cup of black beans, drained and rinsed
  • 1 avocado, diced
  • 1 cup of cherry tomatoes, halved
  • ¼ cup of chopped fresh cilantro
  • Sour cream, for serving
  • Salsa, for serving
  • Lime wedges, for garnish
  • Salt and pepper to taste
  • optional toppings – lettuce, green onions, pinto beans, guacamole, queso, or taco seasoning in the ground beef, black olives, jalapenos

How to Make Nachos on a Blackstone

  1. Preheat the Blackstone Griddle: Turn your Blackstone griddle to medium-high heat and allow it to preheat.
  2. Heat the Pulled Pork: Place the pulled pork on the griddle and heat it thoroughly. You can add a little barbecue sauce if desired for extra flavor. Once heated, push it to the side of the griddle to keep warm.
  3. Warm the Chips: Spread the tortilla chips evenly across the griddle. Be careful not to overcrowd.
  4. Layer the Toppings: Sprinkle the shredded cheddar cheese over the chips. Add the black beans, corn, and red onion evenly across the top. Allow the cheese to melt and everything to heat through.
  5. Add the Pulled Pork: Once the cheese has melted, distribute the warmed pulled pork evenly over the nachos.
  6. Garnish the Nachos: Remove the nachos from the griddle and transfer them to a serving platter. Top with sliced jalapeños, avocado, cherry tomatoes, and fresh cilantro.
  7. Serve: Serve the nachos with sour cream, salsa, and lime wedges on the side. Season with salt and pepper to taste.
  8. Store leftovers in an air tight container. 

Recipe Tips and Tricks 

Can I use an oven if I don’t have a Blackstone? Yes you, just pile all the toppings on the chips and let it cook in the oven for a bit. 

How do I melt cheese on a Blackstone? Just close the lid on top of the Blackstone and let it  the steam melt the cheese inside of the griddle.
