If you’re a fan of Applebee’s Chicken Fajita Rollup, but don’t want to leave the house to get it, you’re in luck! With this copycat recipe, you can make it at home.
These chicken fajita rollups are a copy cat recipe of Applebee’s famous chicken fajita rollups! It’s a large burrito with melted cheese, lettuce, pico de gallo, and chicken that has been flavored with fajita seasoning. Many of the recipes I saw online of this had a list of ingredients that was at least 20 items or longer. I used some kitchen shortcuts so all those ingredients aren’t necessary.

Why You Will Like Chicken Fajita Rollups
Here’s what I did to help reduce the amount of time spent in the kitchen to make these. Most stores (especially Aldi or any grocery store) have prepared pico de gallo and bags of shredded lettuce.
The only food you have to cook here is the chicken and I just cooked some Tyson chicken strips in air fryer for 12 minutes at 350 degrees.
Chop those up when they are done. Then make the fajita sauce in the bowl and melt the cheese on the tortilla in a pan. So easy and it’s great for lunch!
Ingredients Needed for Fajita Rollups
- 4Ole Extreme Wellness High Fiber Tortilla Wrap (8 in)
- Colby Jack Cheese–I like to use Reduced-Fat Cheese because it has a lower calorie count and less saturated fat than regular cheese,but it may also have a different taste and texture. It also helps with keeping the calorie count pretty low for this recipe.
- Pico de gallois a traditional Mexican salsa that is made with fresh ingredients such as diced tomatoes,onions,jalapeño peppers,cilantro,and lime juice.
- Shredded Ice Berg lettuce –
- Cooked Shredded chicken breasts –They’re lean and quick-cooking and always come out juicy and tender. Use an instant-read thermometer to make sure that the chicken is not over cooked. When reading labels for chicken breasts try to find ones that say Organic or Free Range. Sauce:
- Low fat mayo –Using low fat mayo reduces calories
- Lemon juice –This adds a nice burst of citrus flavor to the marinade to help enhance the choice of protein. Use freshly squeezed over bottled juice.
- Milk –Dairy does not like me at all so I go for a lactose free milk such as Fairlife. It also has more protein in it.
- Fajita seasoning mix or Taco seasoning mix

- 4Ole Extreme Wellness High Fiber Tortilla Wrap (8 in)
- 8 ozof low fat cheddar or Colby Jack Cheese
- 1 cupof fresh pico de Gallo
- 2 cupsof shredded ice Berg lettuce or chopped up Romain lettuce
- 8 ozof cooked shredded chicken breasts or frozen chicken strips
- ½ cuplow fat mayo
- 1 tablespoonof lemon juice
- 4 tablespoonsof 1% milk
- 4 tablespoonsof pico de Gallo
- 1 tablespoonof fajita seasoning mix
Instructions
Preheat air fryer to 350 degrees. Place the frozen chicken strips in the air fryer basket and cook for 12 minutes. Remove them from the air fryer basket and dice the chicken.
While the chicken is cooking prepare the sauce. Combine mayo,milk,lemon juice,pico de gallo,and fajita seasoning in a bowl. Stir to combine.
Heat a medium nonstick skillet and place a burrito tortilla on the grill and sprinkle cheese on top. Heat the tortilla up on the skillet until all the cheese is melted. Remove from heat.
To assemble. Add chicken to the middle of the tortilla,pico,de gallo,and lettuce. Fold in two sides and then roll it up. Cut down the center and dip it in the fajita sauce.
