It’s made with just a few simple ingredients like frozen cauliflower rice, lime juice, garlic powder, and cilantro. Fresh, zesty, and healthier than regular rice, it’s low in calories and carbs but and still super tasty.
Plus, it only takes 15 minutes to make. You can whip it up quickly for dinner or make it ahead of time and reheat it later — it’s just as good. Pair it with tacos, burrito bowls, or grilled chicken for a meal that’s light and satisfying. Once you try it, you won’t miss regular rice!

Cauliflower rice: We simply buy a 10-ounce bag of riced cauliflower from the freezer section at the store, which we fry in a pan on medium heat for about 15 minutes. If you rice your own cauliflower, you’ll just need 10 ounces for this recipe.

Lime juice: Lime juice is a must! You can always use more or less lime juice as desired.
Garlic: We add freshly minced garlic to the cauliflower rice to enhance the flavor.
Cilantro: We use about ¼ cup of fresh chopped cilantro. However, you can use more or less as desired.
Salt: We prefer our cauliflower rice slightly salty. We use a scant ½ teaspoon in this recipe. If you prefer less salt, start with ¼ teaspoon and add more to taste.
How to Make
STEP 1: In a large skillet over medium heat, heat ½ tablespoon olive oil. Add minced garlic and sauté until fragrant, about 30 seconds.
STEP 2: Add riced cauliflower and stir regularly until it turns slight golden and tender, about 10 minutes. Stir in salt, lime juice and chopped cilantro. Cook for a few minutes longer. Place in serving dish and serve immediately.
How to Store
Store in an airtight container for 3 to 4 days. Simply reheat in the microwave.
