Boy oh boy do I love a make-ahead breakfast, and this tater tot casserole is just that!
I opted to make a breakfast casserole, because I personally love occasionally enjoying tater tots for breakfast more than I do for dinner.
This casserole features a little bit of everything — meat, eggs, vegetables, and tater tots — making it a filling breakfast option that’s perfect for meal prep.

Ingredients
Tater tots – Frozen tater tots should be easy to find in the frozen food aisle at the store.
Sausage – You have options with this! Either use ground beef or ground pork, or buy sausage (pork or chicken sausage) at the meat counter and remove the casing.
Bell pepper and onion – To help bring flavor to the dish. If you’d like, you could also add chopped mushrooms into the mix; just make sure to dice them small.
Spinach – Or some type of greens like kale.
Eggs – No substitution! This is the main ingredient other than the tater tots.
Cheddar cheese – You could omit the cheese if you want to keep this dairy-free. Otherwise, a melty cheese such as cheddar, Swiss or Colby jack works well.
Instructions
Step 1: Cook the sausage. Start by adding the sausage to a large, oven-safe skillet and cooking it over medium heat until it’s browned. Then, remove it with a slotted spoon and set aside.

Step 2: Sauté the veggies. To that same skillet, add a little bit of oil, along with the bell pepper and green onions. Sauté the vegetables for 3-4 minutes, then add the spinach and cook for 1 minute. Remove from the heat.

Step 3: Whisk the eggs. In a large bowl, whisk the eggs, milk, chili powder, garlic powder, and salt together. Add the sausage and veggies in with the eggs and stir to combine.

Step 4: Add the tater tots. Pour the egg mixture back into the skillet (you may want to spray with a little nonstick spray first), then gently place the tater tots on top. Sprinkle the tots with the shredded cheese.

Step 5: Bake. Place the entire dish in the oven and bake for 40-45 minutes or until golden brown on top and the cheese has melted. Remove from the oven and wait 10 minutes before slicing. Enjoy!

Tips and tricks
- If you don’t own a large, oven-safe skillet, bake the casserole in a 9×13 casserole dish instead.
- Make ahead: To prep this in advance, follow the recipe instructions, but do not bake it. Instead, wait for it to cool, then cover the entire dish with plastic wrap and store it in the fridge for up to 2 days. If you’re baking straight from the fridge, you’ll want to add 5-10 extra minutes to the total cook time.
Tip
The amount of tater tots you use will largely depend on the size of your skillet. I recommend buying a 32 oz. bag, but you may not use the entire bag.
Storage
Refrigerator: Store slices in an airtight container in the fridge for up to 5 days. Reheat in the microwave.
Freezer: Yes, you can freeze leftovers! Simply slice the casserole into pieces, then wrap them individually in plastic wrap and place them in a freezer-safe bag.

- 1 red bell pepper diced
- 2 green onions chopped, plus more for garnish
- 2 cups spinach chopped
- 8 eggs
- ½ cup milk

- 1 cup shredded cheddar cheese

Preheat the oven to 350° F.

Heat a large, oven-safe skillet over medium heat then spray with nonstick spray. Cook the sausage until it’s browned, using a wooden spoon to break it up. Once cooked, remove with a slotted spoon.

Add a little bit of oil to the skillet, then add the bell pepper and green onions and sauté for 3-4 minutes until soft. Add the spinach and saute for 1 minute until it’s wilted; remove from the heat.

In a large bowl, whisk the eggs, milk, chili powder, garlic powder, and salt together. Add the cooked sausage and veggies to the bowl with the eggs and whisk to combine.

Pour the egg mixture back into the skillet, then add the tater tots on top, placing them so that they do not overlap. The amount of tots you use will depend on the size of the skillet you’re using.
