Low-Fat (2% milkfat) cottage cheese: We use a low-fat cottage cheese (2% milkfat) for increased protein. However, you could also use a full-fat cottage cheese since it only slightly reduces the protein percentage. Whatever you have on hand.
Peanut butter: We use Santa Cruz Organic Light Roasted Creamy Peanut Butter since it has no added sugar. However, you could use another sugar-free peanut butter of choice. If not at room temperature, be sure to soften the peanut butter in the microwave before combining with the rest of the ingredients.
Allulose sweetener: We use allulose sweetener to add a little sweetness, but you can use another sugar-free sweetener of choice. Other sugar-free options include erythritol, monk fruit, stevia, etc. Just be sure to checker out this sweetener conversion chart.
Lily’s sugar-free semi-sweet chips: We love adding crushed sugar-free, semi-sweet chocolate baking chips. The chips add a little crunch and make the balls more decadent.
Coconut flour: Helps bind the mixture and reduce moisture. Almond flour can be used, but you may need to add little more.
Vanilla extract: Enhances flavor and adds warmth.
How to Make
STEP 1: Using a food processor or rolling pin, crush the sugar-free chocolate chips. If using a food processor, remove them and set aside.
STEP 2: In a food processor, add the peanut butter, blended cottage cheese, allulose, and vanilla extract. Pulse until well combined. Add the chocolate protein powder and coconut flour. Pulse again until a thick dough forms. Add the crushed sugar-free chocolate chips and pulse a few more times to distribute them evenly.
