Halibut is one of those firm, thick and easy to cook types of fish. It’s not too delicate like the Chilean Sea Bass or Black Cod. And we also have a whole tutorial on How to Grill Fish without it sticking for summer grilling like a pro!
For ease, and due to weather, today we’re making grilled halibut indoors. To make the grilled halibut recipe extra unique, we’re using an Asian inspired marinade. Then we’re skewering them so we can dip them in some luscious Satay Sauce.

Ingredients You’ll Need
We genuinely wanted this to be as simple as it sounds, halibut and just 3 other ingredients. No fuss, just pure delicious!
- Halibut. Use boneless and skinless halibut fillets. The fillets look like a dense piece of steak with a firm texture. Avoid buying buying halibut steak as it contains a piece from the back bone.
- Soy Sauce. We always prefer low sodium and organic soy sauce. This adds so much taste to the halibut.
- Light Brown Sugar. The sweetness compliments the halibut fish so well. It also helps caramelize the fish when grilling.
- Ginger. We used powdered ginger and it’s super potent in flavor. The ginger also pairs so beautifully with the sweetness of the brown sugar.
How to Grill Halibut
Mix the Marinade
- The very first step is to mix all the flavroing and marinade ingredients in a shallow plate. They’re basically only 3 ingredients, but they’re SO GOOD! That’s how simple this recipe is.
Prepare the Halibut
- We love skewering the halibut since we’re serving it with Satay Sauce. Instead of cutting it into chunks, we slice each halibut fillet into 3 strips lengthwise. The fish is firm and will not break apart with you.
- You can likewise just cut into chunks, or slice into 2 strips, or keep it as is.
- Now take those sliced pieces of fish and place them right into the bowl of the marinade. Toss them well to coat evenly with the flavors.
- You can marinade the fish for up to 3 hours, or just proceed right away.
- When ready to grill, skewer each piece of fish into a wooden skewer lengthwise. This will keep the fish intact and in shape during grilling. Again since this is a relatively firm fish, you will find that it’s easy to skewer.
Grill the Halibut
- Here comes the fun part–the grilling! Start by preheating the grill. This can be an outdoor gas or charcoal grill. Or you can grill them indoor as we did here-thanks to our cold weather.
- Make sure to read this tutorial on How to Grill Fish without it sticking. It explains how to prepare the grill and the different tricks to grilling fish. The sensitive ones and the firm ones.
- When the grill is ready, place the halibut on the grill in a single layer.
- Grill for just 2-3 minutes and flip when charred. Continue cooking and grilling on the other side until the fish feels firm. If you have a meat thermometer,, the internal temperature should record 145 degrees F.
- At that point the grilled halibut is ready.
What to Serve with This Grilled Halibut
There SO MUCH that goes well with this recipe! Today, in keeping with the Asian marinade flavors, we served some Coconut Rice and Satay Sauce. It was the most PERFCT combo and dinner ever! Cant’s urge you enough to try it. This whole combo takes 30 minutes start to finish.
Another amazing side dish would be the Asian Cucumber Salad or Easy Cucumber Salad. Also try drizzling some Chili Oil Recipe or Hot Honey Recipe! If you want a refreshing side dish, try it with Papaya Salad. A spicy side dish would be Spicy Ramen Bowl.
A refreshing fiesta would be grilled halibut with Mango Pico De Gallo , Cilantro Lime Rice and Corn Ribs.

Tips to Grill Halibut
- Make sure you buy halibut fillet and not halibut steaks. This recipe works only for fillets where the pieces of fish is entirely boneless and skinless.
- Ask your fish monger for fresh fish, always. It has to look firm with a clean white color, and no fishy smell.
- Similar to the Miso Cod, this recipe has minimal ingredients, so make sure they’re quality. Low sodium and organic soy sauce is preferable. And make sure your dried ginger spice is fresh.
- While you can marinate the halibut before grilling for up to 3 hours, it’s not necessary.
- When choosing skewers for the fish, make sure you use the correct size. We used the 4.7 inch skewers as they were the perfect length for our fish strips.
- You can grill the halibut in an outdoor gas or charcoal grill. Make sure to prepare the grill and follow the tips on How to Grill Fish without it sticking.
- Keep an eye on the halibut as you don’t want to overcook it. When cut into strips, the fish requires just 2-3 minutes per side, depending on your grill.
- If you have a meat thermometer, it should register 145 degrees F.
- Try other marinades with the halibut. You can try a simple herb butter to slather on the fish when hot and ready off the grill.

Seafood and fish is always a good option when it comes to healthy eating. Fish like halibut is rich in omega 3 and nutrients, so it’s highly recommended. If you buy wild caught fish, you’ll also be supporting sustainable farming.

As a fish, halibut is relatively one of the not “fishy” tasting fish. It has a mild flavor which makes it ideal for any type of marinade or seasoning. Halibut also has a semi firm texture which is why we LOVE to grill it. You can also make great Fish Tacos using it.
How long to Grill Halibut?
If you rely on a meat thermometer, the internal temperature you’re looking for should be 145 degrees F. Otherwise, look for the fish when it flakes easily and has an opaque white color and firm texture.
Since we cut our fillets into strips and skewered them, our fish took 2-3minutes MAX per side. A whole fillet would take 5-6 minutes or so per side. Make sure not to overcook the halibut as it can dry out quickly.
