What a simple and really fun offering rather than the traditional birthday cake this year!

Birthday Cake Whoopie Pies are so easy to make with minimal ingredients and very little time needed!

All you need is a box of cake mix and your favorite buttercream recipe!

Sprinkles are optional but honestly can we even have a birthday without sprinkles?

Notes for Success:

Duncan Hines Cake Mix is accidentally vegan since they do not source their mono & diglycerides from animals
Any cake box you use will most likely work although I have not been able to try them all
Be sure to use the 15.25ounce box for best results

Bob’s Red Mill egg replacer is my preference *not sponsored but any dry blend egg replacer will work great!

Finding Vegan Sprinkles can be a difficult task so maybe try your hand at my Homemade Recipe for sprinkles instead!

Serves: 12 large sandwhich cookies

Ingredients

  • 1 ~ 15.25oz Box Duncan Hines Cake Mix
  • All Purpose Flour ¼ cup (30g)
  • Dry Blend Egg Replacer 1 Tablespoon *I use Bob’s Red Mill *see notes
  • Plant Milk 6 Tablespoons (90ml)
  • Vegetable Oil 8 Tablespoons (118ml)
  • 1 Recipe Your Favorite Buttercream Recipe

Instructions

  1. In a large mixing bowl combine all of the ingredients together with a whisk or a spatula to a smooth batter~ it will be thick like brownie batter, more like a dough
  2. Refrigerate the dough for 30 minutes & once chilled, Preheat the oven to 350°F & then scoop balls of dough approximately 1 Tbs or use a #100 scoop then line them up on a parchment lined sheet pan spaced 2 inches apart
  3. Bake for 10-15 minutes *I think mine took 12 minutes to very light golden~ do not over bake or the cookies will be dry. I like mine slightly chewy & soft inside.
  4. Next prepare your favorite recipe for vegan buttercream and then choose your flavors and sprinkles.
  5. Once the cake mix cookies are fully cooled fill the with buttercream and then sandwich them together, roll in sprinkles, nuts, toasted coconut etc….

Notes

Birthday Cake Whoopie Pies will stay fresh for up to 5 days in an airtight container at room temperature.
You can freeze them for up to 2 months wrapped well
