Slaw:
- 3 small (about 2 ounces each) kohlrabi bulbs, trimmed, unpeeled
- 6 medium (about 2 ounces each), carrots, trimmed, unpeeled (orange, yellow, or red)
- 6 small pink radishes, trimmed, unpeeled
- 1/4 cup golden raisins
- 1/4 cup coarsely chopped walnuts
- 2 tablespoons chopped fresh parsley
Creamy Orange Dressing:
1. Using a food processor to box grater, shred kohlrabi bulbs, carrots, and radishes on the largest shred setting (if you shred it too finely, the texture will not hold up well.) Transfer to a large salad bowl.
2. Add raisins, walnuts, and parsley to the salad bowl and toss gently.
3. Mix together the mayonnaise, orange juice and zest, Dijon mustard, and black pepper in a small dish until smooth and creamy.
