This Brussels Sprouts Slawis made with simple ingredients like brussels sprouts,red onion,and cheese,and is coated in a slightly tangy &sweet vinaigrette. Zero cooking is required and it’s ready in under 15 minutes!

Brussels sprouts may just be my favorite vegetable,and this brussels sprouts slaw is a simple way to make them a little more exciting.
My fried brussels sproutsare my go-to way to enjoy them if I want a hot side dish. But this slaw is a very simple cold side dish that’s perfect for warmer weather.
I personally feel like this slaw can (and should!) be eaten year-round. The ingredients lean a little more fall,but I wouldn’t hesitate to make this for a picnic or as a grilling side dish.

Ingredients
Brussels sprouts –The main ingredient;I bought whole brussels sprouts and shredded them in my food processor. However,to save time,you could buy pre-shaved brussels sprouts if they have them at the grocery store.
Red onion –Necessary to give this slaw more flavor. Shallot would be a fine substitution if you need an alternative ingredient.
Cheese –Parmesan cheese or gruyere work really well in this slaw,so that’s what I’m recommending. You can buy shaved parmesan in a container,or use a peeler to shave parmesan from a block.
Dried cranberries –Dried fruit such as cranberries or dried cherries add a hint of sweetness and tart,so don’t omit!
Pumpkin seeds –Mostly for texture (a little crunch),so if needed,sunflower seeds are another good choice.
Almonds –Slivered almonds,or sliced almonds,work best,as would chopped walnuts.
Olive oil –The main ingredient in the dressing,so choose a high-quality extra virgin olive oil.
Lemon juice –Freshly squeezed lemon juice,rather than store-bought juice,will result in the best flavor.
Sweetener –I used honey and I think it pairs well with the lemon and dijon,but maple syrup or agave would work as well.
Dijon mustard –I’m not a mustard person at all,but a little bit of dijon adds the best flavor to vinaigrettes (trust me!).
Vinegar –Apple cider vinegar is slightly sweet and pairs well with the dried cranberries in the slaw. White wine vinegar is another good option.
Instructions
Step 1:Make the dressing. Start by whisking all of the vinaigrette ingredients —olive oil,lemon juice,honey,dijon mustard,apple cider vinegar,salt,and pepper —together in a small bowl or glass measuring cup,then set aside.

Step 2:Shred the brussels sprouts.Add the brussels sprouts to a food processor and shred,or thinly slice by hand,then transfer them to a large bowl.
Step 3:Add remaining ingredients.To that same bowl,add the red onion,parmesan,cranberries,pumpkin seeds,and almonds. Then,add HALF of the vinaigrette and use kitchen tongs to toss. Add more dressing as desired and enjoy!

Tips
- If you’re shaving the sprouts by hand,make sure to use a sharp knife so they slice more evenly.
- After making this slaw,you can either serve it immediately or place it in the fridge to chill for a little bit first.
Tip
Soak the onion:To remove any bite from the onion,simply slice them then place in a bowl. Cover with cold water and let them sit for 10 minutes or so,then drain and use in the slaw.

Refrigerator:Store leftovers in an airtight container in the fridge for up to 4 days.
Meal prep:If you want to make this in advance and enjoy it throughout the week,wait to add the vinaigrette until you’re ready to eat this. Otherwise,the sprouts may become a little too soggy.
