1 pound ground breakfast sausage:

½ teaspoon salt and ½ teaspoon black pepper:

1 teaspoon Dijon mustard or smoked paprika (optional):

½ cup all-purpose flour:


Instructions

Boil the eggs: Place 4 eggs in boiling water for 8–9 minutes for hard-boiled or 6–7 minutes for soft-boiled.

Transfer to an ice bath and peel once cool.

Season and prep the sausage: In a bowl, mix the sausage with salt, pepper, and optional mustard or paprika.

Set up your dredging station: Dip the egg in flour, then egg, and panko bread crumbs.

  • Bowl 1: flour
  • Bowl 2: beaten raw egg
  • Bowl 3: panko breadcrumbs

Roll each sausage-wrapped egg in flour, then dip in egg, and coat with breadcrumbs. Lightly press to help the breadcrumbs stick.
