Avocado Strawberry Smoothie – Rainbow Nourishments

This refreshing drink has layers of sweet avocado milk, cold creamy milk and tangy strawberry puree. The recipe was inspired by the popular strawberry matcha latte and the Lebanese strawberry avocado smoothie!

Notes about the ingredients

Avocado. It’s best to use a ripe avocado that can be blended easily.

Dairy-free milk of choice. I used soy milk for this recipe, although any milk will work.

Sweetened condensed milk. If you’re vegan or dairy-free, I loved this recipe with oat or coconut condensed milk. Alternatively, you can use maple syrup, although condensed milk adds a deeper milky flavour.

Ripe strawberries. The sweeter the strawberries, the better the flavour!

Make the avocado milk

For the smoothest and creamiest avocado milk, it’s best to use a blender or strong food processor.

If your blender/food processor is a little weaker, your avocado milk might be a little lumpy, but still delicious! You can enjoy it as is, or press it through a sieve for a finer consistency. The final mixture should be runny with some viscosity; a runnier avocado milk is easier to layer in the drink.

Taste test the mixture and adjust as desired. You may want more sweetener, a dash of vanilla extract or even a pinch of salt!

Make the strawberry mixture

The easiest way to make the strawberry mixture is to add the strawberries to your drinking glasses and mash them with a muddler. If you don’t have a muddler, you can mash the strawberries in a bowl with a fork.

Alternatively, you can puree them with a blender or food processor. This requires more washing, but your strawberries will be finer in texture (which is great if you’re drinking out of a narrow straw).

For a deeper strawberry flavour, you can cook the strawberries in a small saucepan until you have a thicker puree.

Tips for layering the drink

No matter how you layer the drink, it will still be delicious.

For the ‘neatest’ layers, it helps to use a lot of ice, or to drizzle the milk and avocado milk down the back of a spoon.

The avocado milk is thicker and heavier than the plain milk so it may sink. If it does, simply use a spoon or mini spatula to smear the avocado milk on the sides of the cup.

Can I prepare parts of this drink beforehand?

Yes, the strawberry and avocado components can be made beforehand. The avocado milk will brown slightly over time, so it’s best to keep it in a small airtight container and place a lid or food wrap directly on top.

Instructions

  • Make the avocado milk: Add the avocado, milk and condensed milk to a blender or food processor. Blend until well combined and smooth. Set aside.

  • Make the strawberry mixture: In two tall glasses, add the strawberries. Use a muddler to mash the strawberries well. Alternatively, you can mash the strawberries in a bowl with a fork, or puree them with a blender/food processor, then add them to the glasses.
  • Assemble: Fill ½ to ¾ of the glasses with ice. Slowly pour the milk on top. Top with the avocado mixture. Decorate with chopped avocado and strawberries, if desired.

Notes

  1. Instead of sweetened condensed milk, you can use 1-2 tablespoons (20-40g) of any liquid sweetener or a granulated sweetener. The flavour profile will be slightly different.
  2. You can use any granulated sugar, but the granules will take at least a few minutes to dissolve.
