Ingredients

  • 6 sheets puff reduced Puff pastry, defrosted
  • Olive oil spray
  • 1 kg extra lean beef mince
  • 1 tbs onion powder
  • 1 tbs garlic crushed
  • 2 grated carrots
  • 1 Zucchini, grated
  • 1 cup burger Pickles, finely diced
  • 3 tbs tomato paste
  • 2 tbs Dijon mustard
  • 1/2 cup quinoa flakes
  • 2 Eggs, scrambled
  • 12 slices smokey Sliced cheese, cut in half
  • 1/4 cup reduced fat milk
  • 1 tbs sesame seeds

Instructions

  1. Preheat oven to 280C, line 2 large trays with baking paper, spritz with olive oil and lay out sheets of pastry.

  2. In a large bowl combine beef mince, onion powder, garlic, carrots, zucchini, pickles, tomato paste, mustard, quinoa flakes and eggs. Mix well until all ingredients are combined.

  3. Gently cut the pastry sheets in half and place halved slices of cheese along the middle of each half.

  4. Spoon the mince mixture on top of the cheese, complete this step until the mince mixture is evenly distributed across all the prepared pastry sheets.

  5. Brush a small amount of milk along the pastry edge of each sausage roll and tightly roll up pressing firmly on the pastry seam of each sausage roll to seal.

  6. Once all sausage rolls have been rolled cut them in half and place on prepared baking trays.

  7. Brush each sausage roll with milk and sprinkle with sesame seeds.

  8. Place in the oven and bake for 45 minutes or until golden brown and cooked through.

  9. This recipe makes 24 sausage rolls.
