Ingredients

  • 2 cups shredded light cheese
  • 1 tbsp olive oil
  • 1 small red onion diced
  • 1 clove garlic minced
  • 500 grams turkey mince
  • 1/2 tsp chilli powder
  • 1/2 tsp cumin powder
  • 1/2 tsp paprika powder
  • 1/2 tsp salt
  • 1 avocado peeled, de-seeded & diced
  • 1 cup fresh tomato chopped
  • 1/2 cup fresh coriander chopped
  • 1 lime cut into 4 wedges

Instructions

  1. Preheat the oven to 180C and line a large baking sheet with baking paper.

  2. Grease one muffin tin and set aside. Have a second ready to use.

  3. Spoon 2 tablespoons of cheese, spaced about 5 cm apart onto baking paper. Bake for 6 minutes or until bubbly and begin to turn golden. Cool for a minute before the next step.

  4. Carefully pick up melted cheese and place into muffin tin. Fit with a second muffin tin and let cool for 10 minutes.

  5. Place a large fry pan over medium heat. Heat oil for a minute then add onion and cook, stirring occasionally for 5 minutes, or until soft. Stir in garlic for a further minute, then add turkey mince, breaking up meat with a wooden spoon. Cook for 6 minutes or until no longer pink. Add spices and salt and cook for 2 more minutes, stirring until combined.

  6. Place 2 cheese cups per plate. Fill with turkey and share out avocado, tomatoes and coriander. Serve with a wedge of lime each.
