Add the chicken to the bottom of the slow cooker. Dissolve both broth concentrates into the hot water and pour over top of the chicken. Season with the garlic powder and the onion powder.

Place the lid and cook on high for 4 hours. Turn off the heat and sprinkle the xanthan gum over top. Use 2 forks or an electric mixer to carefully shred the chicken into the liquid. Stir in the heavy cream and season with salt and pepper to taste.
