With just a few steps of stirring together seasoning and refried beans, filling tortillas with cheese and beans, then crisping, you’ve got 4 or more burritos (if you feel like doubling or tripling this recipe) that you can store and freeze for when it’s all just too much.
The best part? It’s so easy to customize to your exact liking, you can make it ahead of time, and I’ve included easy instructions for reheating after frozen!

- Salsa

- Burrito-sized tortillas

How to Make a Bean and Cheese Burrito
We’ll start this bean and cheese burrito recipe by adding refried beans, salsa, and seasonings to a small saucepan over medium heat. Stir until well mixed and warmed throughout.
Next, lay tortilla flat onto a work surface, like a cutting board, and divide the cheese equally amongst the centers of each tortilla.
Now, spoon seasoned refried beans over the cheese in a rectangular shape to mimic the final burrito shape.
Fold the sides of the tortilla inwards, pinching and flipping the bottom of the tortilla over those sides, rolling into a delicious bean and cheese burrito. Repeat for all tortillas.
Set a large skillet over medium high heat, laying two burritos flat onto the skillet, with a bit of space in between. Cook for 2-4 minutes on each side, brushing with oil before flipping. Cook burritos until golden and crisp.

- Set a small saucepan over medium heat, adding refried beans, salsa, chili powder, paprika, garlic powder, cumin, and salt and pepper. Stir until well mixed and warmed throughout.
- Lay tortillas flat on a work surface, spreading an equal amount of cheese into the center of each.
- Spoon seasoned refried beans mixture over the cheese into a rectangular shape in the center.
- Fold the sides of the tortilla inward, then roll the bottom edge over those sides, liking making a big egg roll. Roll tightly until you make a burrito. Repeat for all tortillas.
- Heat a large skillet to medium high heat, laying two burritos flat and slightly spaced apart.
- If a crispy golden exterior is desired, spray with cooking spray or brush with oil or butter. Crisp on one side for 2-4 minutes, then flip and coat the other side with oil. Crisp the remaining edge until golden brown.
- Serve with taco dip, baked tortilla chips, and pineapple salsa.
