It’s also this Easy Italian Celery and Orange Salad that comes in handy when trying to stick to a food budget. (The ingredients are super inexpensive.)
It’s made with just five ingredients I almost always have on hand, including those so-often-tossed celery leaves. No #foodwaste here.
I think the reason friends rave about this easy salad is simply the look of it. Our friends David and Laura were munching on it and David said,
“I’ve never thought to cut oranges into skinny wheels like that.”
Don’t they look pretty? And with today’s super sweet oranges, I never even bother to cut off the white pith on the outside. I just peel the orange as normal with my fingers and then slice the whole orange into rounds.
Try to serve this salad on a platter. I think that’s another reason it looks rather impressive. A simple dinner plate will do – or a wide shallow pasta bowl.
Either way, it’s also perfect for picnics. Carry it where you’re going in a zip-top plastic bag (or covered bowl), then pour onto a plate when you arrive at wherever you’re headed. Made with just 5 ingredients you probably have on hand – including the entire celery stalk – to help you avoid tossing those tasty celery leaves: Easy Italian Celery and Orange Salad.
- 3 stalks of celery, sliced diagonally, including leaves
- 2 oranges, peeled, sliced into rounds
- 1/4 cup green olives (any Italian, Greek or green olive) including 1 tablespoon olive juice
- 1/4 cup sliced red onion
- 1 tablespoon orange juice
- 1 tablespoon extra virgin olive oil
- Salt and pepper to taste
Place celery, oranges, olives, onions on a serving platter.
In a small bowl, whisk together olive oil, reserved olive juice and orange juice. Pour over salad. Sprinkle with salt and pepper to taste.
Notes
This salad makes about 6 cups of salad. To make less, use only 1 orange.
