How is it July already? I mean, I’m still leafing and cooking through my June issue of Cooking Light magazine, the one with yummy summer pizzas on the cover and the inspiration behind this post.
Homemade pizza (even if you buy the dough, it’s homemade in my book!) in the summer has endless possibilities of the freshest, most colorful toppings vs. any other time of year. Whether you make it on the grill (it’s SO easy – check out this post) or just pop it into your super hot oven (preferably on not a super hot day), it’s an easy, family pleasing meal and also terrific for any outdoor entertaining opportunity.
My Green & White Summer Pizza inspiration came from Cooking Light’s Three-Cheese White Pizza with Spinach using the goodies from my weekly CSA share.
My greens = spinach and escarole (which I cooked in boiling water for 2 minutes, drained and then added to the sautéing spinach)
My whites= white onions, garlic, Asiago cheese and fresh mozzarella
