The Incredible Edible Egg!

Eggs are a super food, and if you are worried about cholesterol, don’t be. They do not raise cholesterol as once reported (literally for decades, eye roll). A single egg contains 6 grams of protein, 5 grams of DHA fats (good fats!) and each egg has only 78 calories. They are definitely a great source of protein and healthy fats for the calorie count. My favorite eggs are Vital Farms organic pasture raised eggs. They have a bright orange yolk, a sign of freshness and being fed a good diet rich in nutrients. If the eggs you buy have a pale yellow yolk, shop around until you find a brand with a bright orange yolk.

The trick to making easy to peel Perfect Hard Boiled Eggs is timing and a good old fashioned ice bath! If you have ever had your boiled eggs turn out sub par for any reason, you know how frustrating that can be. And with the cost of eggs right now, wasting them is not an option! The method I am about to teach you is the best method I have found for achieving the perfect hard boiled egg.. The key is cooking the eggs for 10-12 minutes then dipping them in an ice bath for 2 minutes. If you like the yolks slightly soft and slightly orange yellow in color, go for ten minutes. If you like them cooked firm and light yellow, boil for 12 minutes. The ice bath makes the eggs peel like a dream, those shells will literally slide off the egg.

Nothing Beats Sprinkling Eggs with a Quality Sea Salt:

These eggs are perfection but it’s that flaky sea salt that gives them that flavor we all want! I love Maldon’s Flaked Sea Salt (I actually  buy the huge tub to save money)

  • Desired amount of fresh eggs
  • sea salt and pepper

Choose a pot with a lid that is big enough for the amount of eggs you want to boil. Place eggs in the pot and then fill with cold water so the eggs are covered by at least an inch.

  1. Place pot of water and eggs on high heat and bring to a rapid boil. Once the water is really boiling turn off heat. Cover the pot with the lid. Allow the eggs to sit in the hot water for 10-12 minutes. 10 minutes will yield a creamier yolk, 12 minutes will yield a lighter yellow yolk that is more dry. You do you.

  2. Fill a bowl with ice, add water and carefully spoon your eggs into the ice bath. Let them sit for 10 minutes. You can now peel, or store in the fridge unpeeled until you are ready to eat them. Enjoy!
