I think fresh green beans have a better flavor and slightly firmer texture, but when you’re short on time, frozen ones are a fantastic option—they’re convenient and still taste great. Whether fresh or frozen, your keto green bean casserole will be as satisfying and flavorful.

Cream of Mushroom Soup and Keto Fried Onions

Instead of relying on canned soup or store-bought fried onions, I love making my versions. Recently, I whipped up some French fried onions as a healthier twist on fast-food onion rings, and they were so good that I couldn’t resist using them for this casserole.

The same goes for the creamy mushroom soup I made earlier in the week. My daughter requested it, and there happened to be leftovers. Rather than reheating it independently, I paired it with green beans to create a new dish. The result? A casserole bursting with rich flavors and homemade goodness that I didn’t expect to love this much.

How To Make Keto Green Bean Casserole Recipe

I enjoyed the recipe because it is easy to make and surprisingly good for a 3-ingredient casserole recipe. My version of green bean casserole is so flavorful and creamy without even a need for cream cheese or heavy cream.

Kitchen Gadgets Needed:

  • Casserole Dish: You will need a casserole dish for baking, but you can use any baking dish if you do not have one.
  • Mixing Bowl: Use a mixing bowl to make the green bean mixture.
  • Rubber Spatula: Any spatula you have at home is okay since you will only use this for mixing the mushroom soup and fresh green beans.

Green Bean Casserole Ingredients:

  • Green Beans: Look for fresh green beans with a vibrant color.
  • Cream of Mushroom Soup: Instead of fresh mushrooms, use a portion of your cream of mushroom soup to make it more easy and flavorful.
  • Fried Onions: Crispy French fried onions are essential for this recipe because they go at the top of the casserole and give it an excellent finish.

STEP-BY-STEP INSTRUCTIONS FOR LOW CARB GREEN BEAN CASSEROLE

First Step: Prepare Ingredients

Prepare all the ingredients and start preheating your oven to 375 F (190 C).

Second Step: Blanch the Green Beans

Trim the ends off the green beans and blanch them in boiling water in a large skillet for at least 3-4 minutes. Drain them and transfer them into a bowl.

Third Step: Green Bean Mixture

In a bowl, pour the cream of mushroom soup into the blanched green beans and mix until the green beans are all covered with the mushroom sauce.

Fourth Step: Transfer and Add Toppings

After mixing the green beans and mushroom soup, transfer them to your casserole. Optionally, you can add more mushroom soup or sauce to make it more flavorful.

Once assembled in the casserole, sprinkle the fried onions on top.

Fifth Step: Bake

Bake at 400 Fahrenheit (200 Celsius) for 10 minutes until the top of the casserole brown and gets crunchy.

  • Blanching – This process is important for this recipe because it makes the green beans stand out more and gives them a vibrant green color. Just make sure not to overcook the green beans in this process.
