Ingredients You’ll Need
- Lamb.
- We used lamb loin chops for this recipe. This is the exact cut that we made with this delicious fig butter . You can however use those lamb chops too.
- Another phenomenal and SUPER popular cut you guys have loved is the lamb steak.
- And finally, for a super affordable cut, you can use the lamb shoulder chops.
- Just make sure you ask your meat guy before buying and make sure it’s local lamb.
- Seasoning. Salt and pepper.
- Garlic and Fresh herbs. We love a combo of fragrant basil and oregano here! You can add thyme.
- Butter and Oil. The combo is perfect for cooking and searing. You get the butter flavor without the burn.
Romesco Sauce Ingredients
- Roasted Sweet Peppers
- Almonds
- Basil and parsley or just parsley
- Cherry tomatoes (canned or fresh)
- Garlic
- Lemon
- Parmesan Cheese
- Olive oil
How to Cook Perfect Lamb Chops
Make The Romesco Sauce
- To make the Romesco sauce recipe, you’re going to use blender or food processor and add all ingredients together.
- Process until the sauce is as chunky or smooth as you prefer. We love some chunks as the texture of the nuts is so appealing with the sweetness of the roasted peppers.
- You can however make it as smooth as you prefer—it will be more of a soft paste / sauce consistency.
- Taste and adjust for seasoning, and then set the sauce aside.
Cook the Lamb Chops
- The first step is to season the lamb chops on both sides generously with salt and pepper.
- Now you’re going to preheat a cast iron or heavy duty skillet with some oil and butter.
- Add the lamb chops when the skillet is super hot.
- 1 minute after adding in the lamb chops, you’re going to add in some aromatics. We used whole garlic cloves smashed and some fresh oregano. You can add shallots or lemon slices too.
- After 2-3 minutes, depending on the thickness of your chops, flip the chops in the skillet while dropping the heat to medium.
- Continue cooking the lamb chops while constantly basting the tops with butter from the skillet.
- They’re ready when an internal temperature is at 145 degrees F, which is the recommended temperature by the USDA.
- At that point you’re ready to enjoy the lamb chops right away!
- Spread a layer of the Romesco sauce at the bottom of the plate.
- Carefully add the lamb chops on top.
- Optionally, we love dollops of basil pesto right on top of each lamb chop. You can use store bought or homemade.
- Make sure to get all the butter droppings from the skillet too!
- Garnish with some freshly grated parmesan, extra black pepper and chilli flakes if you like.

- Start with fresh and quality American lamb, it makes a difference to your recipe! It also makes a huge difference to buy local and support local.
- The marbling in the chops is great for tenderness, even if you trim some exterior fat off.
- This recipe is super straight forward and requires no marinades or waiting time. So make sure once again you use superior lamb for it!
- Make the Romesco sauce 2 days in advance to save some time and keep it in the fridge. To serve, simply reheat it in the microwave for 1 minute to reach room temperature.
- Use a combo of oil and butter to cook the lamb chops. The flavour of butter is what makes it succulent and tasty. While the oil will ensure that the butter doesn’t burn.
- A heavy duty cast iron is best to sear meats and lamb chops, or a stainless steel skillet.
- Avoid flipping the chops too soon.
- Add the aromatics of your choice, and make sure they’re whole. Avoid mincing or finely dicing, as they may burn before the chops have cooked.
- The lamb chops cook in about 5-7 minutes total, depending on the thickness of the chops.
- 10.Basting the lamb chops with butter ensures it cooks evenly and minimizes flipping in the pan.

Instructions

Make the Romesco Sauce by adding all ingredients in a blender or food processor.

Process the ingredients until saucy and smooth or slightly chunky, to your taste.

Season and adjust seasoning if needed, then set aside.

Preheat a heavy duty skillet with the oil and butter.

Season the lamb shanks well on both sides, pressing down the seasoning on the meat,

Add the chops to the hot skillet and then add the garlic and herbs.

Cook the chops for 2 minutes before flipping.

After flipping, drop the heat to medium and continue cooking the lamb chops for another 4 minutes.

During the 4 minutes, make sure to continuously baste the tops of the chops with butter from the skillet.

The chops are ready when the internal temperature is about 145 degrees F.

To serve the dish, spread a layer of the romesco sauce.

Top with the lamb chops on one side, and air fryer asparagus on the other side.

Dollop some basil pesto over the chops.

Sprinkle with parmesan cheese, some coarse black pepper and chilli flakes if needed.
