I opted not to call this lemon poppy seed dressing high protein in the title, but at 4g protein per serving when most dressings are less than .5g, this dressing is definitely high protein by comparison.

I point this out only so you can feel righteous when eating it, because this luscious lemon salad dressing seems wayyyy too delicious to be good for you! But I promise that it’s going to taste better and be a much healthier option than anything you can find in the grocery store.

I won’t go on and on about it because it’s simply a salad dressing, but I will say that this dressing is absolutely one of my new favorite recipes for being both easy to make and loaded with flavor.

Of course you can and should use this creamy lemon poppy seed dressing on salads, (including the one pictured above, which I will post later this week) but it’s also a great dipping sauce for veggies, cold shrimp, and even chicken tenders.

Yeah, just sit with that idea for a minute, and then go make some ASAP. You can thank me later. 😂

This creamy lemon poppy seed dressing recipe is made with honey, but you can easily make it keto friendly by substituting erythritol (or another carb free sweetener,) which will bring the net carbs down to 3g per 1/4 cup serving.

Description

A delicious creamy lemon poppy seed salad dressing that is gluten free and high in protein.


Ingredients

  • 1/2 cup lowfat cottage cheese (I used Good Culture)
  • 1/3 cup 1% milk
  • 3 tablespoons honey (or a carb free sweetener of your choice)
  • 2 teaspoons grated lemon zest
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup avocado oil
  • 1/2 teaspoon coarse kosher salt
  • 1 tablespoon poppy seeds


Instructions

  1. Combine the ingredients (except for the poppy seeds) in a blender or magic bullet and blend until smooth.
  2. Add the poppy seeds and blend for just 5 seconds to distribute.
  3. Store in an airtight container in the refrigerator for up to 5 days. Do not freeze.
