Happy Friday already? This week went by quick. There wasn’t a chance in heck (such a Utah word, I know) that I was going to be able to get up early for a workout so it was a get everyone to school and then hit the gym kind of a day.
I’ve been to the gym more in the last month than in the previous decade haha.
Andrew’s job definitely has some fun for him perks and that makes me really happy when I get pictures like this:
I have been going through a Freida drought while waiting for one of her books to become available on Libby. You don’t have to worry about me anymore because I just got this one yesterday, and so far, so good.
We got in a bit of skiing time after school.
The resort was so peaceful yesterday.
And mac and cheese when Beck’s legs were toast.

Everyone is out there in our state talking about how amazing BYU’s football team is this year but why is nobody talking about BYU’s peppermint candy ice cream??

“I am hosting part of my family for a week this year during the holidays. Folks are staying at a nearby hotel, so breakfast is covered, and lunch will be out often, or easy sandwiches and chips/drink at home. We have Christmas dinner covered, a cheese charcuterie board planned for appetizers, and one meal out at a ‘fancy’ spot, but five more dinners still has me freaked out, especially as doing something like steak every night would be way too pricey. Dinners will only be for 7 people total, but compared to the three of us I normally cook for, it is a big adjustment. I don’t want to be a stressed-out cook during the evenings because it is special to finally get my family at my house. I want to enjoy being with them! Do you have about 5-7 go-to recipes for family groups that are easy and foolproof? I love my slow cooker/instant pot, and my family is cool with soups/chilis/pastas etc. Welcome suggestions from anyone in the comments!!!”
*These chicken enchiladas (11 recipes from the bottom) are something I could eat all day, every day… I also love these enchiladas.
*Everyone in our family loves this easy coconut shrimp recipe or this crockpot thai chicken curry!
*My mom’s lasagna recipe has a 100% success rate.
*My nieces and nephews will be over real fast when they find out I have cream cheese chicken chili in the crockpot (I add an extra can or two of tomato sauce to the recipe).
*If I had to pick just one soup for the rest of my life, it would be this Creamy Tortellini one. Andrew entirely agrees with my statement on this soup, too. More of my favorite soups are in this post.
*This copycat Cafe Rio sweet pork is SO good in tacos, salads, burritos!
*This pink pasta sauce for pasta has changed my life.
*This winter salad is a dream. Andrew and I have made it like 50 times.
*A beautiful dinner bar is one of my favorites for groups, and you can get so creative with them too–>. Baked potato bar, salad bar, pasta bar, nachos bar, sweet potato nacho bar, taco bar, burger bar, or greek chicken bowls. It’s fun to have options lined up and people can go crazy with their favorites.
*These sheet pan pitas were a big success for a Sunday dinner with family that we had.
Also, I haven’t made it yet, but I’ve been dreaming of this panini.
