This peanut butter cottage cheese mousse is sweet, creamy, and packed with rich peanut butter flavor. Made with sugar-free peanut butter, low-fat cottage cheese, sugar-free sweetener, and sugar-free whipped cream, itโ€™s an indulgent treat without the guilt. In fact, this might just be our new favorite cottage cheese mousse!

And donโ€™t worry, you donโ€™t need to be a fan of cottage cheese to love this dessert. The texture is smooth, light, and creamy, with just a subtle tang that enhances the peanut butter flavor.

We blend whipped cottage cheese with sugar-free peanut butter for a bold, nutty taste and fold in sugar-free whipped cream for a fluffy, mousse-like texture.

The best part? Itโ€™s made with just four simple ingredients and comes together in about five minutes. You can also top it off with your favorite add-ons like chopped nuts, sugar-free whipped cream, or even a sprinkle of dark chocolate for extra decadence.

Ingredients

Cottage cheese:ย We use a low-fat cottage cheese (2% milkfat) in this bowl since it slightly increases the protein, and we found little difference in taste between the low- and high-fat cottage cheese when done.

Sugar-free peanut butter: We useย Santa Cruz Organic Light Roasted Creamy Peanut Butterย since it has no added sugar. However, you could use another sugar-free peanut butter of choice. If not at room temperature, be sure to soften the peanut butter in the microwave before combining with the rest of the ingredients.

Sugar-free Whipping Cream: To enhance the flavor and make the mousse lighter, we incorporate zero-sugar whipping cream. We simply use store-bought zero-sugar whipping cream since it’s tasty and low in carbs.

STEP-BY-STEP INSTRUCTIONS

Step 1: In a food processor, blend the cottage cheese until completely smooth. In a small bowl, microwave the sugar-free peanut butter in 15-second intervals until soft and easily to stir.

Step 2: Add the melted peanut butter to the food processor and blend until fully incorporated with the whipped cottage cheese.

Step 3: Transfer the mixture to a medium bowl and gently fold in the sugar-free whipped cream with a spatula until light and fluffy. Topped with crushed sugar-free chocolate chips if desired.

How to Store

This mousse is best enjoyed fresh, but it will stay creamy and delicious for a few days. Store in an airtight container in the fridge for up to 2 days. For the best texture, stir before serving or fold in a little extra whipped cream.
