A single egg contains 6 grams of protein, 5 grams of DHA fats (good fats!) and each egg has only 78 calories. They are definitely a great source of protein and healthy fats for the calorie count. My favorite eggs are Vital Farms organic pasture raised eggs. They have a bright orange yolk, a sign of freshness and being fed a good diet rich in nutrients. If the eggs you buy have a pale yellow yolk, shop around until you find a brand with a bright orange yolk.
The Secret to Making Perfect Soft Boiled Eggs (Jammy Eggs)
The trick to making easy to peel Perfect Soft Boiled Eggs (Jammy Eggs) is timing and a good old fashioned ice bath! If you have ever had shells that crack when you put them in boiling water or shells that stick to the egg whites, tearing them to shreds as you peel, you know how frustrating it is. The method I am about to teach you prevents both of these scenarios. The key is cooking your eggs for seven minutes on a slow boil, then dipping them in an ice bath for 2 minutes. If you put eggs into rapidly boiling water there is a good chance they will crack, so it’s best to bring the water to a heard boil and then turn down the heat to a low boil before adding the eggs. What to do with Soft Boiled Eggs:
You can eat soft boiled eggs as is with sea salt and pepper, chop them up and put them on toast, or put them in one of my easy protein bowls!

Place a pot of water on high heat and bring to a rolling boil. Water should cover eggs by at least an inch. When water boils, lower heat to a soft boil. Place eggs on spoon and gently lower into water. Boil for 7 minutes. Make an ice bath by placing ice into a bowl and adding water. Use spoon to lower boiled eggs into ice bath, let them for 2 minutes. This stops the cooking process and makes them easy to peel. Peel, cut in half, sprinkle with sea salt and pepper, serve.
