Let’s Talk About These Roasted Maple Glazed Carrots with Feta
Before we get to the recipe particulars, let’s talk carrots. Carrots are a root vegetable and the perfect health food. They are a fabulous source of beta-carotene, fiber, vitamin K1, potassium, and antioxidants. And, they’re low in calories. They have been linked to lower cholesterol levels and improved eye health. What’s more, their carotene antioxidants have been linked to a reduced risk of cancer. Which, of course, is awesome! But they also taste great, add color to your meal, and when dressed up a little are even a great addition for a holiday meal.
These Roasted Maple Glazed Carrots with Feta are made in three easy steps: first, you slice the carrots, then toss in a mixture of olive oil, maple syrup, sea salt and pepper. Second, you roast the carrots until cooked and the edges slightly brown. Third, plate and sprinkle with feta and freshly chopped herbs. That’s it. This recipe takes about 8 minutes to prep and 40-45 minutes to cook.
The Feta and Herbs:
I use a soft French sheep’s milk feta for this recipe. It’s so creamy and has that wonderful salty bite. I use cilantro to garnish, but if you are one of those people that hates cilantro, feel free to use chives or parsley instead. All are tasty and healthy options!
What to Serve it With:
I love to serve these carrots alongside my Perfect Filet Mignon.
The Recipe: Roasted Maple Glazed Carrots with Feta
What you need: a rimmed cookie sheet, the best sea salt, parchment paper, and a good knife!

A delicious carrot side dish that’s perfect for casual family meals, entertaining, or the holidays. I highly recommend using parchment paper or you are going to have a really sticky pan to clean up.

medium-large sized carrots, peeled and sliced 1/4″ thick -

tablespoons
good quality extra virgin olive oil -
2
tablespoons
maple syrup - sea salt and pepper, to taste

cup
crumbled feta cheese -
1/4
cup
chopped cilantro, chives, or parsley - Optional: if you like a little crunch this dish is nice sprinkled with sliced almonds

Place a piece of parchment paper on rimmed cookie sheet. Preheat oven to 425 degrees and place oven rack in center position.

Peel and slice carrots, place on parchment covered cookie sheet. Whisk together olive oil and maple syrup, drizzle over carrots, toss. Make sure all carrots are covered with glaze.

Sprinkle with sea salt and black pepper. Toss again.

Roasts for 40-45 minutes, until carrots are cooked and starting to brown on the edges. Remove from oven.

Place carrots on a platter, sprinkle with Feta and herbs. Serve.
