Slide into summer with these speed-boosting salsas


Whip up one of these speedy salsa recipes in no time, then hit the road to conquer those Strava segments. Not only does salsa brighten any meal, it also gives your running game a boost.

Tomatoes are more than just tasty—they’re packed with lycopene to cut down on oxidative stress and inflammation from tough workouts. Plus, their rich potassium content helps keep your electrolytes balanced, preventing cramps and keeping you going strong.

Mountain legs mango salsa 

1 ripe mango, cubed
1/2 cucumber, diced (including peel)
1/2 red bell pepper, diced
1/4 red (or sweet) onion, finely chopped
1/4 cup fresh cilantro, coarsely chopped
2 Tbsp white balsamic vinegar
2 pinches red pepper flakes, salt to taste

Instructions:

In a bowl, combine the diced mango, red bell pepper, red onion, cilantro, vinegar and red pepper flakes. Allow the mixture to sit to let all the flavours mingle, salt to taste and enjoy.

Black bean corn Salsa

Ingredients

1 can black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 red bell pepper, diced
1 small red onion, finely chopped
1/4 cup fresh cilantro, chopped
Juice of 2 limes
1 tsp ground cumin
Salt and pepper to taste

Instructions

In a large bowl, toss together the black beans, corn, red bell pepper, red onion and cilantro.

Squeeze in the lime juice. Add the ground cumin, and season with salt and pepper to taste. Mix well and let sit for at least 15 minutes to allow the flavors to blend.

Why it’s good for runners: Black beans are an excellent source of protein and fibre, helping to repair muscles and keep you full and energized for longer.

PB peach salsa

Ingredients

1 medium tomato, diced
1/4 red bell pepper, diced
1/2-1 jalapeño, minced
1/4 medium onion, diced
2 peaches, cubed
1/4 cup roughly chopped cilantro
2 Tbsp lime juice
1/4 tsp ground black pepper

Instructions

Combine tomatoes, red pepper, jalapeño, onion, peaches, cilantro, lime juice and black pepper until well mixed.

Why it’s good for runners: Peaches are a hydrating, antioxidant-rich fruit packed with carbohydrates and electrolytes, ideal for replenishing energy, reducing inflammation and supporting muscle function in runners.
