While I adore my air fryer and Instant Pot,the crockpot is my tool of choice when it comes to set-it-and-forget-it meals. The ability to prepare a meal,like pulled porkor pumpkin curry soup,hours ahead of dinner time is unmatched on those days when I can’t be in the kitchen.
These Slow Cooker Chicken Fajitas are another one of my go-to crockpot meals for easy family dinners or when I want to get a headstart on Taco Tuesday. Similar to my slow cooker chicken tacos,the fajitas are packed with savory and bold flavors,tender-crisp veggies,and juicy chicken. Cook everything in the slow cooker,then load the hearty filling into tortillas with your favorite toppings and enjoy!

Ingredients
Bell peppers –I used a medley of red,orange,and yellow bell peppers for a bright and mouth watering color contrast. Feel free to use any color of bell pepper you like.
Chicken breasts–Slow cooked boneless skinless chicken breasts are tender and so easy to shred after a few hours. You can also use boneless chicken thighs if you prefer darker meat,but keep in mind that they’ll take slightly longer to cook.
Diced tomatoes–I prefer to use canned fire-roasted tomatoes for an added smoky flavor. Regular diced tomatoes or freshly chopped Roma or beefsteak tomatoes also work well.
Fajita seasonings–I seasoned the chicken with a homemade fajita seasoning blend made from chili powder,cumin,garlic powder,smoked paprika,dried oregano,salt,and pepper. Feel free to use a store-bought blend to save more time.
Tortillas and toppings–There’s nothing better than chicken fajitas served in corn or flour tortillas with lots of fresh toppings! Check out the fajita topping ideas in the Serving Suggestions below.
Instructions
Step 1:Make the seasoning. Stir the fajita spices and herbs together in a small bowl.
Step 2:Layer in the slow cooker. Add half of the peppers and onions to the bottom of the slow cooker,then place the chicken on top. Season both sides of the chicken with the fajita seasoning,then top them with the tomatoes,garlic,and remaining peppers and onions.
Step 3:Cook. Cook the chicken fajitas on high for 3 to 4 hours,or until the chicken is cooked through. Stir in the fresh lime juice.
Step 4:Shred the chicken. Use two forks to shred the chicken breasts,then assemble the fajitas into tortillas with your favorite toppings. Enjoy!
Tips and FAQs
- You’ll know the chicken is done cookingwhen the meat is no longer pink on the inside,the juices run clear,and a meat thermometer measures the internal temperature at 165ºF.
- Warm the tortillas before assembling the fajitasto prevent them from cracking or breaking. You can do this by wrapping the tortillas in a slightly damp paper towel and microwaving them for about 30 seconds.
- Is the chicken looking a bit dry in the slow cooker? Try adding a splash of chicken broth to the pot,and remember not to remove the lid while the fajitas are cooking to trap all of that moisture.
Tip
If you like the bell peppers to have a crisp-tender texture,add them to the slow cooker 30 minutes before the cook time is up.
Variations
- Add mushrooms–Sliced portobello mushrooms are also a fantastic veggie add-in and provide a nice earthy flavor.
- Spicy chicken fajitas–Add a pinch of dried red pepper flakes,1 or 2 sliced jalapeno peppers,or swap the diced tomatoes for canned tomatoes with green chilies.
- For even easier prep–Use pre-cooked shredded chickenand mix it into the veggies about 30 minutes before they’ve finished cooking.
- Low-carb–The chicken fajitas are naturally low-carb! Just serve them over cauliflower rice with your desired toppings instead of in tortillas.
- Gluten-free–Serve the fajitas in corn tortillas or your favorite gluten-free tortillas.

For a fun family dinner,serve the chicken fajita mixture next to corn or flour tortillas and bowls of individual toppings so everyone can customize their own. There are plenty of fajita toppings to choose from,like guacamoleor guacamole salsa,sour cream,shredded cheese,avocado slices,green onions,red onions,lime wedges,pico de gallo,queso,fresh chopped cilantro,and so much more.
If you end up with leftover filling,use it as a topping on salads or burrito bowlswith cilantro lime brown rice(or cauliflower rice as a low-carb option),or stuff it into burritos or wraps.
How long does it take to make chicken fajitas in a slow cooker?
The total cooking time will depend on how many chicken breasts you’re cooking and the functionality of your slow cooker. It took me between 3 to 4 hours to cook 3 chicken breasts in this recipe.
Can I use frozen chicken breasts instead?
You can,but I recommend thawing the chicken breasts in the fridge overnight before adding them to the slow cooker.
Storage
Refrigerator:After the chicken fajita mixture has cooled,transfer it to an airtight container and store it in the fridge for 3 to 4 days.
Freezer:The chicken and pepper mixture will also freeze well for up to 9 months. Store the leftovers in a sealed ziplock bag and press out as much air as possible. Remember to let the leftovers thaw in the fridge overnight before reheating.
Reheating:Reheat the chicken and peppers in the microwave for 2 to 3 minutes or in a skillet over medium heat until warmed through.
