If you love spring rolls, you have to make this salad! I added chicken in there for some extra protein and the peanut dressing is to die for!!

1 cup creamy peanut butter

4 tbsp Choczero Sugar Free Maple Syrup

2 tsp Apple cider vinegar

3 tbsp tamari or soy sauce

2 tsp lemon juice or lime juice

½ cup water

1 tsp garlic powder
-
1 tsp ginger powder (use fresh if you have it)

½ tsp chili flakes or to taste

Pinch of salt

6 cups shredded romaine lettuce

2 bags of Miracle Noodle egg white vermicelli

1 carrot, shredded
-
½ cup red bell peppers, diced
-
½ cup yellow bell peppers, diced

1 cup cucumber, diced
-
1 cup purple cabbage, sliced
-
½ cup sliced almonds
-
Cilantro
-
Mint or fresh herbs to top!
Directions:

Season your chicken and airfry at 400F for 20 mins, flipping halfway through. Once cooked, set aside.

Cut your vegetables, and make everything for your toppings as your chicken is cooking.

For the noodles, you can throw them straight into the salad from the bag, or rinse them like I did before!

In a large bowl or mason jar, add all of your ingredients for your dressing and mix.

Assemble your salad! Lettuce at the bottom, and all of your desired toppings on top.

Dress your salad with your peanut dressing and enjoy!
