Sugar-Free Berry Dump Cake with Keto Cake Mix


Hard to beat this sugar-free berry cobbler, aka dump cake, since it’s super tasty and easy to make with berries and keto cake mix!

This sugar-free and keto berry cobbler, also known as dump cake, is one of the best and easiest summer desserts you can make when berries are in season. However, if you love this dessert as much as we do, you can enjoy it year round whether you use fresh or frozen berries

And this fool-proof recipe tastes heavenly when topped with keto vanilla ice cream or sugar-free whipped cream (a must for the tastiest experience!).

To keep this dessert low in carbs, we use a combination strawberries, blackberries and raspberries. Although you don’t have to use a combination of berries (you could use just one type of berry), we think the mix of berries produces the tastiest cobbler

For the cake mix, we like to use Good Dee’s keto yellow snack cake mix. But, you can also use Duncan Hines keto-friendly yellow cake mix, which is sold at most grocers. The Duncan Hines keto cake mix adds a slight coconut flavor (due to the use of coconut flour), which is still tasty if don’t mind coconut. Ingredients

Mixed berries: We use a combination of strawberries, raspberries and blackberries to keep the carbs low and for variety. We like to use fresh berries, in which we quarter the strawberries. That said, frozen mixed berries work just as well in this dessert (no need to thaw). Since frozen strawberries can be large and whole, we recommend using just raspberries and blackberries for consistency.

Sugar-free, keto-friendly yellow cake mix: We like to use Good Dee’s keto yellow snack cake mix. But, you can also use Duncan Hines keto-friendly yellow cake mix, which is sold at most grocers. The Duncan Hines cake mix adds a slight coconut flavor (due to the use of coconut flour), which is still tasty if don’t mind coconut. Butter: For the crumble layer, you’ll combine melted butter (unsalted) with the cake mix.

How to Make

STEP 1: Pre-heat oven to 350 degrees F. If using fresh strawberries, cut into quarters. Combine all the berries in an 8×8 baking dish and spread to an even level.

STEP 2: In a large, microwave-safe bowl, melt butter in microwave. Add cake mix to bowl and use hands to combine until it begins to hold together in larger crumbles.

STEP 3: Evenly crumble the cake mix combination over the top of the berries until covered.

STEP 4: Bake for 20 to 25 minutes until top is golden brown and berries are tender. At 15 minutes, you may need to cover dish with tinfoil if crumble topping is turning brown. (Note: If using frozen berries, it may need 10 minutes longer to bake). When done remove from oven and let cool for 15 minutes. Serve with keto ice cream or sugar-free whipped cream for the tastiest combination!

How to Store

Store any leftovers in a covered container in the fridge for up to 3 or 4 days. Simply reheat in microwave as desired.

Notes

The cobbler is best when served with keto ice cream or sugar-free whipped cream.
