It has been a minute since I posted a new salad recipe. I call this one The Rustic Italian Salad because it’s loaded with all things I consider to be the best Italy has to offer! This salad makes a great side dish, light main course or lunch. You’re going to love it.

The Rustic Italian Salad:
So much flavor, color, texture and beauty. The Rustic Italian Salad is a delicious blend of sweet, savory, bitter and salty. We’ve got peppery arugula and bright purple radicchio lettuces as a base, then we add salty prosciutto, shredded Parmesan, chopped Marcona almonds, sweet pears and dress it all in a simple and quite lovely white balsamic dressing.
The White Balsamic Dressing:
We finish this colorful salad with a simple white balsamic vinaigrette made with heart healthy olive oil, white balsamic vinegar, sea salt and ground pepper. So easy and take two minutes to make. You may find white balsamic at your grocery store. but I have to tell you, this Prelibato is the best on the market!
What to Serve it With:
This salad is delicious served alongside my Greek Chicken Thighs!

Tips and what you need: Marcona almonds and white balsamic .

The Rustic Italian Salad is a beautiful salad made with traditional Italian ingredients

sliced radicchio lettuce, sliced -

slices prosciutto, cut into 2″ strips -

ripe pear, cut into small cubes -

Marcona almonds, chopped -

freshly grated Parmesan -
1/4
cup
good quality olive oil -
1/4
white balsamic vinegar (see my link above for the best!) - sea salt, freshly ground black pepper

Place all ingredients except cheese on a platter

Place olive oil, vinegar, sea salt, and pepper in a small bowl and whisk. Dress salad, toss, sprinkle with cheese. Serve!
