I make this refreshing watermelon feta salad all summer long! I had a few friends over for a BBQ for my friend’s birthday and I served my Grilled Lobster Tails, grilled steaks, and this simple Watermelon Feta Salad with arugula and mint, which was such a hit! Watermelon is the best addition to any summer salad since it’s so light and refreshing. This salad couldn’t be easier and it looks so fancy! The watermelon is so juicy that the salad doesn’t even need a dressing. I used a melon baller to cut the watermelon into small balls, but you can also dice it into small chunks. I love how the sweet and salty flavors complement each other. The freshness of the watermelon goes perfectly with the saltiness of the feta cheese, and the fresh mint adds the ideal finishing touch.

  • Watermelon, cut in balls with a melon baller or cut into cubes, this sweet and juicy fruit is the base of the salad.
  • Baby Arugula: It has a peppery taste that goes well with watermelon.
  • Fresh mint leaves: Add some freshness and flavor
  • Feta cheese: Crumbled in large chunks, adds creaminess to the salad.

How To Make Watermelon Feta Salad

  1. Start by using a melon baller, and prepare the watermelon into large balls. If you don’t have one simply cut into into 1/2 inch chunks. Set aside in a bowl until ready to serve.
  2. About 30 minutes before you’re ready to serve, drain the liquid from the bowl (I poured it into a cup and drank it!).
  3. Scatter half of the watermelon into a large, shallow serving bowl and scatter half of the arugula and feta on top, repeat with the remaining watermelon, arugula and feta then top everything with fresh mint.
