Weight Watchers Pumpkin French Toast – this french toast is all you need on a crisp Fall morning!
I discovered something new today. I live alone and I really need to start having my recipes or cutting them by ¼. With something simple like French toast, you don’t have to make it all at once. You can save the egg and milk mixture in the fridge in a bowl and just cover it with saran wrap. This way, you won’t have to make all the French Toast at once and make it throughout the week for breakfast if you like.

Ingredients Needed for Pumpkin French Toast
French Toast
- 5 Eggs, beaten
- ¾ c. 1% milk
- ½ c. pumpkin puree
- 1 tsp. vanilla extract – As Ina Garten always says use a good pure vanilla extract. No imitation vanilla please! Vanilla extract is made by combing vodka and fresh vanilla beans to a glass jar. This has to sit for a couple o
- ½ tsp. cinnamon
- kosher salt
- 8 slices of 45 calorie bread such as Sarah Lee
- Cooking Spray
Pumpkin Butter
- 4 tbsp. light unsalted butter, slightly softened
- 2 tbsp. pumpkin puree
- 2 tbsp. sugar free maple syrup
- ¼ tsp. cinnamon
- kosher salt
Additional Toppings
- Powdered sugar, for sprinkling (optional)
- Sure Free Maple syrup, for drizzling
How to Make Pumpkin French Toast
Step 1 In a shallow baking dish, whisk eggs with milk, pumpkin, vanilla extract, pumpkin pie spice, and a pinch of salt. Place bread slices into the pumpkin custard mixture and let soak, about 30 seconds per side.
Step 2 In another small bowl add the softened unsalted butter, pumpkin puree, sugar-free maple syrup, cinnamon, and salt. Stir to combine and set aside until ready to use.
Step 3 Spray a large non stick skillet with cooking spray and let it heat up. Cook 2 slices bread at a time until golden, 3 to 4 minutes per side. Repeat to cook all slices.
Step 4 Top French toast with pumpkin butter, sprinkle with powdered sugar, and drizzle with maple syrup. (optional)
Pumpkin French Toast Recipe Tips
To make this pumpkin french toast more Weight Watcher friendly, I used 45 calorie bread such as Sarah Lee. Then you can easily swap out simple things like milk for unsweetened almond milk, use sugar-free syrup, and for the pumpkin butter.
I used a light butter such as Country Crock. You don’t need a heaping tablespoon of butter to cook the french toast in a skillet, just use some cooking spray. This French toast is all you need on a crisp Fall morning.
How to store leftovers: Always store leftovers in clean, food-grade containers. The type of container doesn’t really matter. Use zip lock, glass, plastic, whatever! Make sure to store any leftovers in an airtight container before putting it in the freezer or fridge.
This can be prepped the day ahead.
